Dough

The base of almost any pancake batter is wheat flour. But while that's a given, many cooks have questions about the other ingredients. When preparing pancakes for Maslenitsa, culinary enthusiasts often wonder: should they be made with kefir or milk? Both methods are excellent in their own right. I'll share a recipe for both milk and kefir-based pancakes.

Cooking with milk

Thin pancakes for Maslenitsa

For them we will need a standard set of products:

  • 3 glasses of milk;
  • 300 grams of flour;
  • 4-5 tablespoons of sugar;
  • 3 medium chicken eggs;
  • a quarter cup of vegetable oil;
  • Salt.

We make the batter for these pancakes without any fuss. First, beat the eggs with salt and sugar, then add the milk and mix. Then, gradually whisk in the flour. Lastly, add the vegetable oil. Finally, thoroughly mix everything together to create a runny batter. Pancakes made with this batter are thin and delicate. Fry them in vegetable oil until golden brown.

Pancakes with kefir

Pancakes with kefir and berries.

Kefir makes them thin, tender, and crispy. To prepare them, you'll need the following ingredients:

  • One and a half cups of flour;
  • 1/5 cup sugar;
  • 2 incomplete glasses of kefir;
  • 2 medium chicken eggs;
  • 3-4 tablespoons potato starch;
  • ½ teaspoon baking soda;
  • a quarter cup of vegetable oil;
  • Salt.

Making the dough according to this recipe differs from the "milk dough." Here, we mix kefir and baking soda and let it rest for about ten minutes. Separate the eggs, separating the whites and yolks. Whisk the whites with salt, then beat the yolks with sugar, then add flour and starch. Stir, add the kefir, and then the whites. Then pour vegetable oil into the resulting dough and, after thoroughly mixing everything one last time, fry the pancakes in a small amount of oil.

"Funny" pancakes

Multicolored pancakes - how to bake?

Did you know that you can make pancakes colorful without using synthetic dyes, using only natural ingredients given to us by nature? If you didn't know, be sure to try "coloring" your pancakes for Maslenitsa and delight your family and friends.

You can make them green using spinach. If the spinach is frozen, thaw it, then add eggs, milk, or kefir and blend. Then add the remaining ingredients (depending on your dough recipe). Cook as usual. The only difference is that yours won't turn out regular, they'll be green.

To make red pancakes, add a glass of tomato juice to the dough, mixing it with milk or kefir.

As you can see, it's all quite simple, and these "fun" pancakes are very easy to make at home. Your kids will especially love this treat.

Possible fillings

This is where your imagination can run wild. Fillings can be fruit-based, including fresh fruit and jams, vegetables, fish, or meat. The most popular fillings are egg and rice, potato and liver, and meat and mushrooms. With a little imagination, you can experiment with this, and delicious pancakes are guaranteed.
