Cheesecake translates from English as "cheese cake." It's called "cheesecake" because its main ingredient is cheese. Despite this delicacy's popularity among Italians, the birthplace of the classic cheesecake is not Italy, but Ancient Greece. It was here that cheesecakes were first baked, and they became so beloved for their wonderful taste that the cheesecake recipe was adopted in other countries. Now let's talk about the specifics of making mascarpone cheesecake.

There are many recipes for cheesecake. The main ingredients are cream cheese (ricotta, Philadelphia, mascarpone), heavy cream, eggs, and shortbread cookies. The consistency of cheesecake is similar to a cheese soufflé or cottage cheese casserole. You can garnish the dessert with fruit, chocolate, vanilla, or mint—it's up to you.

A classic cheesecake shouldn't crack or rise during baking. To prevent this, remember a few simple general rules:

  1. Beat the creamy cake base with a whisk or fork. Don't use a mixer, as this will introduce too much air into the mixture and cause the cake to crack.
  2. The dessert cake should be baked at a low temperature in a water bath.
  3. To reduce breakage of the top layer of the cake, carefully separate it from the sides as it cools.

You followed all the rules, but your cake still has cracks? Don't worry, decorate it with fruit. No cake "imperfections" will affect its taste.

But enough theory and general recommendations. Let's get down to the recipes themselves.
