A dietary recipe for delicious cookies
Homemade baked goods are always fresh and made with love. They're also made with only the freshest, highest-quality ingredients. But sometimes, not everyone can enjoy delicate, crumbly cookies or rich buns. If you or someone you love is forced to follow a diet, limiting many foods, don't be upset that you'll never be able to enjoy anything delicious again. Diet cookies can be made using more than one recipe. There are countless ways to prepare this delicacy: they can be made with oatmeal, cottage cheese, or biscuits. We'll tell you how to make two of the most delicious varieties of this delicacy. When choosing a recipe, consider the dietary restrictions of the person enjoying the cookies.
Cookies with cottage cheese
Don't be surprised that these dietary cottage cheese cookies contain dairy. The recipe calls for low-fat cottage cheese. So, for the cookies, you'll need:
- 400 g low-fat cottage cheese;
- 1 egg;
- 100 g butter;
- 300 g wheat flour;
- Half a teaspoon of soda;
- Vanillin on the tip of a knife;
- 50 g sugar;
- A pinch of salt.
Place the sugar in a bowl and beat in the egg. First, mix and then whisk the two ingredients until they form a white foam. In a separate bowl, cut the butter into small cubes and sprinkle with salt and vanilla.
Next, take the flour and sift it directly onto the countertop, making sure to wipe it clean first, or onto a cutting board. Once you've sifted all the flour, form it into a pyramid, or more accurately, a mound. Then, make a well in the center. Place the chopped butter in this well, along with the cottage cheese and baking soda. Next, knead all the ingredients with the flour using a fork until you achieve a more or less uniform texture. Knead the dough with this mixture.
The finished dough should be elastic. The recipe calls for dividing it into four pieces. Roll each piece out so it's neither too thick nor too thin, and brush it thoroughly with beaten egg and sugar. Then roll the dough into rolls and cut them into circles. These will be our future cookies.
Place them on a parchment-lined baking sheet and brush the top with egg wash again. Next, preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit), then place the cookie sheet inside. Bake for about 25 minutes. Just be careful not to burn your cottage cheese cookies.
Apple cereal treat
These cookies are drier and crispier than the curd cookies, but no less delicious than the previous ones, and even healthier. They're suitable for those with strict dietary restrictions. The recipe is very simple and straightforward.
Prepare the following ingredients for it:
- 1 apple;
- 1 teaspoon baking powder;
- 1 cup of oatmeal;
- 70 g flour;
- 2 teaspoons cinnamon;
- 50 g raisins;
- 1 egg white;
- Vanillin on the tip of a knife.
Before you start cooking, prepare the raisins. Place them in a bowl and cover with hot water. Let them sit for at least half an hour to soften and become delicious. After 30 minutes, drain the water, spread the raisins on a board or towel, and let them dry.
So, we take a deep bowl. One that will fit all the ingredients. This recipe doesn't require any fancy preparation, so everything is extremely simple. In the bowl, we place the oats, baking powder, cinnamon, and flour. For the cookies, we choose a beautiful, large, ripe apple, without any defects.
Wash the apple and then grate it on a coarse grater. Add the vanilla and egg white to the apple. Mix thoroughly. Now pour this semi-liquid mixture into a large bowl with the dry ingredients. Don't forget to add the dried raisins. Mix everything until a smooth dough forms. Cover the bowl with cling film and refrigerate for about half an hour. While our future delicacy is cooling, preheat the oven to 220 degrees Celsius.
Then line a baking sheet with parchment paper. Spoon small portions of dough onto the baking sheet, trying to form them into round shapes. The recipe calls for a slightly unconventional baking process for these delicious treats: bake for about 15 minutes on one side, then flip the cookies over and bake for a few minutes on the other side.
