  • a couple of pinches of nutmeg;

Step-by-step recipe:

The classic technique for preparing this baked good is always based on mixing all the liquid and dry ingredients separately at the beginning, and combining them only at the very end – just before placing the dessert in the oven.

  1. This recipe is no exception. So, we follow the same process: in one bowl, combine sugar (regular and vanilla), flour, baking powder, baking soda, and spices. In another, beat the eggs and add the vegetable oil.
  2. Add the grated carrots to the flour mixture and stir. Add the egg mixture and quickly whisk until smooth.
  3. Divide the resulting dough into the molds. The recipe recommends greasing and flouring metal molds beforehand, or lining them with parchment paper. Silicone molds, however, require no pre-treatment.
  4. Preheat the oven to 180 degrees Celsius. Baking takes 20 to 25 minutes.
  5. It's time to make the glaze: dissolve the powdered sugar in lemon juice. Dip the baked muffins tops into the lemon glaze – a fragrant and delicious dessert is ready!

  • carrots - 150 g;
  • 2 eggs;
  • flour - 2 cups;
  • butter (or margarine) - 200 g;
  • 1 glass of sugar;
  • baking powder (or soda) - ½ tsp;
  • a pinch of salt;
  • vanilla (to taste).

Step-by-step recipe:

  1. First, crack the eggs into a small bowl and mix them with sugar. Then, beat well with a mixer.
  2. Melt the butter, cool to room temperature, and combine with the eggs. Return the mixer to the mixer.
  3. Add grated carrots to the mixture (the recipe says you'll need about a cup). Stir.
  4. Add baking powder, salt, and vanilla. Finish forming the dough by adding flour.
  5. Next, fill the prepared molds with batter to 2/3 of their capacity and place them in the oven. Preheat to 180 degrees Celsius, and cook for about half an hour.

Carrot muffins are already beautiful—the carrot gives them a delicious golden color. But for an extra touch of elegance, dust them with powdered sugar before serving—it only enhances their appearance.

Carrot Chocolate Muffins

This interesting recipe offers a delicious chocolate twist on juicy carrot muffins. This original version of the muffins requires:

  • 200 g kefir;
  • 2 carrots (150 grams);
  • 100 g sugar;
  • 200 g flour;
  • 40 g vegetable oil;
  • 2 tbsp cocoa;
  • 1 tsp baking powder;
  • 1 tsp cinnamon;
  • a pinch of salt;
  • powdered sugar (for decoration).

The recipe for these muffins is as follows:

  1. Traditionally, mix the dry ingredients (flour, cocoa, salt, baking powder, cinnamon, and sugar) and liquid ingredients (kefir and butter) separately. Grate the carrots on the finest grater.
  2. Combine the liquid and dry ingredients, stirring quickly, and finish the composition by adding the grated carrots. Divide the mixture among the molds, leaving 1/3 of their volume empty.
  3. By this time, the oven should be well preheated to 200 degrees Celsius. Place the molds with the dough in the oven and bake for about 25 minutes. Once cooled, generously dust the baked goods with powdered sugar.

However, you can slightly improve the recipe and decorate the small cupcakes with "snow caps." To create them, take 200 ml of 30-35% cream and whip it with 3 tablespoons of powdered sugar. Then, add a snow-white topping to each cupcake.

This will, of course, increase the calorie count slightly, but the carrot muffins made with this recipe are quite lean, so there's no need to worry about losing weight. The delicate, creamy flavor will further enhance this already delicious treat.
