Do silicone muffin and other baking pans need to be greased?
Content
A silicone baking pan is a convenient tool for preparing a variety of delicious treats: cupcakes, muffins, pies, cookies, bread, cake layers, rolls, casseroles, and other baked goods. Its key advantages include excellent heat conductivity and a non-stick coating. Silicone, like other materials, has its drawbacks, but these can be avoided with proper use. There are a couple of important considerations that concern many home cooks: should a silicone pan be greased, and what is the best way to do so.
Do I need to lubricate before each use?
Silicone molds typically don't require additional greasing. This can not only waste time but also increase the calorie content of the finished product. Line the bottom of the mold with parchment paper, foil, or paper cupcake liners, as the material will prevent the baked goods from sticking to the sides.
The only exception to this rule are surfaces with complex patterns or ridges. It's best to lubricate these surfaces every other time and thoroughly rinse them to remove any food residue.
If you are still concerned about food sticking to the sides of the pan, spray them with a small amount of cold water before pouring.
If you choose to wash your mold in the dishwasher or use chemical cleaners to clean the surface, you will need to re-grease the entire inside surface before using it again.
When to grease a silicone mold
Even though silicone is a non-stick material, it still needs to be greased in some cases. Typically, silicone molds are greased when working with very sticky materials.
- Marshmallow
Anyone who's ever tried making this airy jelly mixture knows how sticky and chewy it is. Therefore, if you decide to make marshmallows in a silicone mold, be sure to grease it thoroughly and sprinkle it generously with powdered sugar. Otherwise, the marshmallow mixture will stick to the mold, making it impossible to remove.

- Marshmallow
Marshmallows aren't as sticky as marshmallows, but they're still quite clingy. So if you're using silicone molds to make marshmallows, grease them with a thin layer of butter and dust them with powdered sugar.
- Peculiarities of working with chocolate
Chocolate doesn't stick to silicone molds and releases easily. However, if you choose silicone molds for creating chocolate bars or shapes, there are a few things to consider:
- First, before the first use, treat the mold with alcohol and dry it thoroughly;
- Secondly, it's not recommended to wash silicone chocolate molds. Simply wipe them with a soft, lint-free cloth.
- Thirdly, when working with such molds, it is not recommended to wipe/wash them with hard sponges, as they leave scratches on the mold, which subsequently affects the appearance of the finished chocolate products.

Silicone: Is it harmful or not?
This is perhaps the most pressing question that concerns every housewife. Convenience is great, aesthetics are simply wonderful, but if there's a health risk, all the above-mentioned advantages are negated. To be fair, neither glass nor metal pans have survived such a barrage of controversy in their lifetimes.

The longer we use silicone molds, the more arguments their ardent opponents raise. Meanwhile, professional chemists authoritatively assert that only improperly chosen kitchenware can be harmful to health. Of course, today you can find molds from unscrupulous manufacturers who use cheaper raw materials with various additives and low-quality dyes. Then, during the heating process, an unpleasant "chemical" odor develops, and harmful impurities can end up in the body.

However, food-grade silicone poses no such danger. This means high-quality molds can be used without any concerns.

How to choose a silicone baking mold
A homemaker who's decided to diversify her culinary repertoire without thoroughly familiarizing herself with the approximate specifications of her "new kitchen inhabitants" will primarily base her choice on appearance. However, experts recommend purchasing silicone baking molds not only based on their overall appeal or appropriate size and volume, but also considering several more important factors:
- As stated above, a safe silicone product is made from medical-grade material. This should be proven not by the manufacturer's words on the label, but by the presence of a quality certificate. Its number is listed in the "composition" column, and upon request, the seller must provide the certificate to the consumer for review and authentication.
- The easiest way to determine the quality of a silicone mold is to smell it. A strong smell of rubber, plastic, or other harsh chemicals should alert you and discourage you from purchasing it.
- If you purchased an unscented mold, but it starts to smell unpleasant when heated, do not bake it again: use it to cool desserts or freeze ice.
- An additional quality check method that provides a relatively reliable result: try bending the item before purchasing. There shouldn't be a white mark at the fold.
- If you still have doubts after conducting basic tests, lean toward purchasing a product in a neutral (light) shade: acidic colors are obtained using caustic dyes that are harmful to the body.
- The country of origin doesn't matter; today, both Belarus and the USA offer a good selection, but ordering a whole bunch from AliExpress, where no one guarantees high-quality silicone, is not recommended.
For cupcakes
There are several varieties of this product, depending on what the cook will be baking:
- A large muffin tin can be used for Easter cakes if it resembles an inverted bucket, or for tall ring-shaped sponge cakes if it has a center pin. They are typically trapezoidal, with a bottom diameter of 10-17 cm. Prices range from 150 to 900 rubles, depending on the manufacturer and size. Good quality muffin tins of this type are available from Mayer & Bosh and Tescoma.
- Small molds are designed for cupcakes and muffins. They have a flat bottom and either flat or corrugated sides. Their diameter ranges from 5 to 8 cm. Their height is up to 9 cm. Their capacity generally does not exceed 150 ml. The most affordable is a set of 3 from Mayer & Bosh for 160 rubles, or from Hors (Russia) for 215 rubles.
A muffin tin can look like a sheet of paper with several (often an even number) round-bottomed pockets. This option is convenient because the baked goods won't tip over, as all the elements are held together. However, some home cooks prefer individual small muffins—this can be more cost-effective, as you can buy any quantity you want, rather than 6, 8, or 12-piece batches.

For cakes
There are two options: some housewives prefer to use molds shaped like hearts, stars, fish, and so on. These are convenient for small sponge cakes, which are cut and assembled after the base has cooled. For mousse desserts, professionals recommend springform molds—these silicone cake molds are identical in appearance to metal ones, but are easier to use. The best options in these categories are:
- Among the springform pans, Lurch (from 1499 rubles) and Bradex (from 690 rubles) are worth considering. Prices may vary depending on size and the presence or absence of an additional non-stick layer.
- Among the shaped ones, Tescoma leads the pack, offering large, beautiful pieces starting at 830 rubles, and Pyrex is in the same price range. They are also comparable in quality.
For cookies
Making thin dough products in such kitchenware isn't done for speed, as baking them on a metal baking sheet isn't particularly problematic. Silicone cookie cutters are primarily used for recipes that don't require rolling, i.e., for fluffy treats. The famous "madeleines" can only be made in special shell-shaped molds. Chefs often prefer using these molds for making shaped gingerbread cookies. They resemble muffin tins in appearance—they're also shaped like a sheet with several compartments (6-12).
You can find interesting options at:
- Silikomart. The manufacturer also offers beautiful stamps that can be used not only to make thin cookies but also to decorate them with chocolate, as pictured in the photo of store-bought double-layer cookies. Prices start at 1,190 rubles.
- Best Home Kitchen. In addition to standard molds, you can find patterned stamps at affordable prices—starting at 130 rubles.
For baking bread
This design is a long rectangle with a minimal difference between the bottom and top perimeters. The silicone bread container has perfectly smooth walls and bottom, although some varieties have slight ridges. The following manufacturers offer this type of container:
- Mayer&Bosh – from 230 RUR;
- Oursson – from 840 RUR;
- Fissman – from 490 RUR
There are also options for small baguettes (up to 20 cm long), primarily sheets that hold 4-9 pieces. These are offered by the Spanish brand Lekue. You can also order bun molds (hemispheres) from them. Prices range from 1850 to 2550 rubles. Experts recommend checking out the official online store for individual muffin molds: the quality of Lekue's silicone products justifies the high price.

Service life
Despite all the advantages of these products, like all other products, they have a limited lifespan. If holes, small holes, roughness, or unevenness are found on the surface, it's best to replace them, as these defects can introduce harmful substances or dirt into the dough and eventually into the human body.
The lifespan of the silicone molds also depends on the operating and storage conditions. Rinse them with water after each use. Avoid using harsh sponges or brushes to clean them, and your mold will last for many years.
Life hacks, features, nuances, secrets
Some cooks use bran as a dusting, especially when baking bread. It will enhance the flavor of rye bread. Some cooks, on the safe side, grease their silicone pans. Experts recommend evenly distributing the fat in the following cases:
- if the container is equipped with ribbed edges, convex areas, recesses, bumps and depressions;
- the dough itself turns out dry and may crumble after cooking in the oven;
- the dough contains a large amount of sugar, jam, preserves, honey and other ingredients that tend to stick;
- when using the cookware for the first time after purchasing it;
- if baking utensils are washed in the dishwasher.

If a baker bakes multiple batches of cakes or cookies in parchment-lined pans, it's recommended to cool the sheets between batches. Failure to do so will result in subsequent baked goods burning. To cool the parchment, run it under running water.
When baking pies and casseroles, choose a glass pan. This will allow you to monitor the dough, its rising, and check its readiness.
How to bake in a silicone mold in the oven
To bake a delicious, flavorful, and beautiful dessert for the whole family and guests, you need to know how to properly handle silicone baking utensils. This process consists of several steps:
- Set the oven temperature to between 170 and 220 degrees Celsius, depending on the recipe. Baking at temperatures above 220 degrees Celsius is not recommended, as the pan may quickly become deformed. Allow the oven to preheat thoroughly before baking.
- Before use, rinse the container with warm water and wipe dry. Place it on a tray and only then fill it with dough.
- Place the baking mat with the silicone molds in the oven for the required time and close the oven door. It is not recommended to open the door during baking, as cold air entering the oven will impede the dough's rising.
- After baking, remove the baking mat and place it on the table to cool. Only after the silicone has cooled completely can you remove the baked goods from it.
After cooking, rinse the cookware with warm water and dry it thoroughly with a kitchen towel. When cooking, keep in mind that silicone is a good heat conductor, so cooking will be completed 18-20% faster than when cooking in a metal baking dish. It's also important to consider whether you're using gas or electric cooking equipment.
Gas oven
A characteristic of a gas oven is uneven heat distribution. Heat is supplied from below, so the bottom of the oven cooks faster than the top. It's recommended to place the cookware in the top position. Silicone should always be placed on a baking tray or baking sheet, as direct exposure to heat can cause the material to melt. Place the baking tray away from the walls, top, and any heating elements.
Electric oven
Silicone cookware is easier to cook in an electric oven because it heats evenly. Therefore, it's recommended to place the tray or base in the middle position. Many modern stovetops have a grill setting with maximum heat. This setting is not suitable for cooking with silicone cookware.
When preparing desserts, it's important to maintain the correct temperature. If it's too hot, the baked goods will quickly burn and turn black, and the dish itself will melt and warp.
