What would you think if you saw this dish on a restaurant menu? You'd probably imagine something very exotic, something with a strange taste. And they would certainly be mistaken, since behind the “pingo bass” is hidden everyone’s favorite delicacy – caramelized fruit.
Caramelized fruit is a Chinese dessert that will delight even the most discerning gourmet, and its preparation is effortless. Caramelized fruit will become your favorite sweet treat and will certainly save you tons of time, allowing you to spend it on your favorite activities or relaxing.
Despite the unique flavor of caramelized fruits, they can easily compete with other similar sweet-fruity combinations. These include fruits coated with toffee and chocolate.
The secret of success
Today, we're ready to introduce you to several stars in the fruit dessert firmament. The star of the show is the apple, which we'll prepare three different ways.
Chinese-style caramel apples
Those same bass pingos are a regular fixture in Chinese cuisine. Try them once, and you'll never forget the taste of Chinese apples!
- 4 apples
- vegetable oil for frying
- 100 g of corn starch
- 60 g of sugar
- mint leaves for decoration (optional)
Method of preparation:
- Peel and cut the apples into 1.5–2 cm wide slices.
- Heat the oil over medium heat. To check if it's the right temperature, place a spoon in the oil; if bubbles form around the spoon, it's ready to fry.
- Roll the pieces thoroughly in starch.
- Fry apples until golden brown, about 3 minutes.
- Remove the fruit to a paper towel to remove excess oil. Drain most of the oil from the pan, leaving only a thin layer on the bottom.
- Pour sugar into the pan, then add 2–3 tablespoons of water. Cook the syrup over low heat, stirring, until it bubbles.
- Return the golden slices to the pan and, stirring gently, combine them with the caramel.
- Serve immediately, garnished with mint.

Toffee Apples
This delicacy has long been popular and can be purchased in many establishments, parks, and even on the street! So, nothing can stop you from making these caramelized fruits yourself.
- 7 apples
- 265 g of sugar
- 130 ml of water
- 1/2 tbsp white wine vinegar
- 2 tablespoons honey or light molasses
- 30 g butter
Preparation:
- Wash the fruit, make a well in the top of each, and remove any stems. Insert a skewer, popsicle stick, or cake pop stick into the top.
- Dissolve sugar in water (medium heat), then add vinegar, honey (molasses) and butter.
- Bring the mixture to a boil and continue cooking until cracks begin to appear. This will take about 10 minutes.
- To check if the caramel is ready, drop a small amount into a glass of cold water. If the caramel is ready, the drop will form a slightly elastic ball. If you use a thermometer, the mixture should be between 146 and 155 degrees Celsius.
- Dip each apple into the glaze, turning it to coat it completely. Place the glazed apples on a prepared, greased serving dish.
Chocolate covered apples
There's probably no one who doesn't love fresh fruits and berries covered in chocolate. This dessert is just as good as chocolate fondue and is even perfect for taking on a walk.
- 6 apples
- 500 g of any chocolate
- multi-colored sugar sprinkles and nuts for decoration
Method of preparation:
- Wash the fruit, remove the stems, and insert skewers or ice cream or cake pop sticks on top.
- Break the chocolate into pieces and melt it in a double boiler. Bring the water to a boil, then place the bowl with the chocolate over the boiling water, making sure it doesn't touch the water.
- Stirring occasionally, melt it until smooth.
- Dip the apples in chocolate until completely coated. Garnish with chopped nuts or sprinkles, if desired.
