If you're feeling ill in the winter, you can make tea or dessert with frozen berries. In this article, we'll share two unusual recipes for light raspberry pies that will not only lift your spirits but also strengthen your immune system.
Raspberry and White Chocolate Pie
This summer dessert is perfect for lovers of French pastries. To make it, you'll need the following ingredients:
- One hundred grams of butter;
- Six to seven tablespoons of flour;
- One whole egg;
- One pinch of salt;
- Four egg yolks;
- Two hundred grams of white chocolate;
- Two hundred milliliters of cream with 20% fat content;
- One pinch of vanillin;
- Three hundred grams of raspberries (can be frozen).
The preparation process is quite simple. First, you'll need to mix the butter with flour. The result should resemble breadcrumbs. Add one whole egg and a pinch of salt to this mixture. Then, knead the dough, shape it into a round shape, and refrigerate for thirty minutes. The raspberry pie will be light and sweet, so the next step is creating the delicious filling.
While the dough is chilling in the refrigerator, bring the cream to a boil. As soon as it starts to boil, remove from the heat. Add the vanilla, egg yolks, and white chocolate chips to the hot liquid. While the mixture is still warm, stir until smooth.
Place the chilled dough into a baking pan and roll it out. To create the crust, bake it at 180 degrees Celsius (350 degrees Fahrenheit) for ten minutes. Fill the pan with frozen or fresh raspberries and drizzle with the chocolate mixture. Bake for half an hour. The pie is ready!
Raspberry and apricot pie
Another "vitamin explosion" is this fragrant pie with raspberries, apricots, and cinnamon. To make it, you'll need:
- One hundred and seventy-five grams of flour;
- One teaspoon of baking powder;
- Two hundred grams of brown sugar;
- Three whole eggs;
- Two teaspoons of cinnamon;
- One packet of vanillin;
- Six apricots;
- Two hundred grams of raspberries (fresh or frozen).
To make this fresh pie, first preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Coat the baking pan with a thin, even layer of butter (butter or refined vegetable oil). For a delicious crust, combine flour, two tablespoons of sugar, twenty-five grams of butter, and a pinch of cinnamon.
Combine the remaining sugar, butter, and flour with the whole eggs, vanilla, and baking powder. Mix thoroughly with a whisk or blender. Add half of the fruit to the mixture.
After pouring the mixture into the pan, arrange the remaining fruit on top and cover with cinnamon mixture. Bake for fifty minutes. The pie is ready!
