We suggest making a dessert whose recipe is very popular in Malaysia, Thailand, Vietnam, and the Philippines. Just looking at the photo of this delicacy makes you slightly hungry. The dish is very appetizing and surprisingly delicious, but not too sweet. Just the thing to treat yourself and the kids! Dipped in coconut cream and peanuts, these sweet bananas will easily make you forget everything else. Try it!

Ingredients:

  • Palm sugar – 55 g;
  • Hot water – 150 g;
  • Unsweetened rice flour – 150 g;
  • Coconut flakes – 210 g;
  • Coconut and whole milk – 120 g each;
  • Wheat flour – 70 g;
  • Baking powder – 35 g;
  • Ripe bananas – 8 pcs.;
  • Salted roasted peanuts – 100 g;
  • Salt – ¼ tsp;
  • Granulated sugar – 50 g;
  • Egg yolk – 4 pcs.

Instructions:

  1. Pour sugar into hot water and stir until completely dissolved. Cool slightly.
  2. In a small bowl, whisk together the rice and wheat flours, 100g of coconut flakes, milk, baking powder, and palm sugar (dissolved in water) until a thin dough forms. Let the dough rise (10 minutes is plenty).
  3. Cut the peeled fruits lengthwise into three pieces.
  4. Dip the pieces in the batter, shaking off any excess. Fry until golden brown and crispy, turning occasionally.
  5. Use a slotted spoon to remove any dough that falls into the hot oil.
  6. To remove excess oil, place the fried slices on a paper towel.
  7. Now you need to prepare the cream. Pour the coconut flakes into a small frying pan and brown over medium heat for 4-6 minutes.
  8. Combine coconut milk, coconut flakes, whole milk, and salt in a small saucepan and bring to a boil. Simmer briefly (about 5 minutes), then turn off the heat and let steep for 30 minutes.
  9. Strain the coconut mixture through a fine-mesh sieve.
  10. Bring the mixture to a boil. Beat the sugar and egg yolks, then add ¼ of the hot coconut milk mixture.
  11. Gradually add the remaining sauce and pour the mixture back into the pan.
  12. Using a wooden spoon, stir until the mixture thickens, 10-12 minutes.
  13. Pour into a bowl and cover with plastic wrap until completely cool.

Chocolate-Dipped Bananas with Rum

For the chocolate sauce:

  • 120 ml cream;
  • 1 tbsp butter;
  • 65 g powdered sugar;
  • 120 g dark chocolate;

For bananas:

  • 45 g butter;
  • 30 g brown sugar;
  • 4 bananas, peeled and cut into halves;
  • 80 ml of rum

For decoration:

  • Whipped cream

Instructions:

  1. In a small saucepan, combine the cream, butter, and sugar. Bring to a boil over medium heat. Remove from heat and stir in the chocolate.
  2. Melt the butter in a large frying pan. Now let's make the caramel. Add 1 tablespoon of sugar, spread it evenly over the pan, and fry until golden brown.
  3. To make caramelized bananas, place them cut-side down in a frying pan and pour rum over them. Continue frying, basting with the sauce, until the bananas are soft.
