Cake:
- Sugar – 140 g;
- Softened butter – 120 g;
- Grated lemon zest
- Egg – 1 pc.;
- Flour – 320 g;
- Poppy seeds – 45 g;
- Soda – 5 g;
- Salt - on the tip of a knife.;
- Sour cream – 100 g
Filling:
- Frozen blueberries – 420 g;
- Sugar – 70 g;
- Flour – 2 tsp;
- Nutmeg – ¼ tsp
Glaze:
- powdered sugar – 100 g;
- milk or lemon juice – 1-2 tsp.
Preparation:
- In a large bowl, beat sugar and butter until smooth.
- Add lemon zest and egg. Beat with a blender.
- In a medium bowl, combine flour, poppy seeds, baking soda, and salt. Add to the butter mixture, then add the sour cream.
- Place the dough on a baking sheet greased with vegetable oil.
- Defrost the blueberries and place them on a paper towel to drain. Mix all the filling ingredients and spread them over the dough.
- Bake at 180C for 45-55 minutes (the crust should be golden brown).
- Add milk to the powdered sugar and stir. Drizzle the glaze over the cake. Serve warm or cold.
Shortbread pie with frozen berries
This recipe is appealing because you can use absolutely any frozen berries. The shortbread pie has a delicate flavor, and the berries add a subtle tartness. The recipe calls for jelly, but you can also whip powdered sugar with egg whites and drizzle it over the pastry. This shortbread recipe allows you to make both open-faced and closed-faced pastries—it's all up to your imagination.
Ingredients:
- Frozen berries – 800 g;
- Flour – 360 g;
- Baking powder – 10 g;
- Vanilla sugar – 10 g;
- Softened butter – 160 g;
- A little water or milk;
- Egg yolks – 2 pcs.;
- Cake jelly – 1 pack;
- A pinch of salt
Preparation:
- Beat butter with sugar and vanilla.
- While continuing to beat, add the yolks.
- Separately mix flour, salt and baking powder, pour into the butter mixture.
- Knead the dough. If necessary, add a little liquid. The dough should be elastic and refrigerated for 30-40 minutes.
- Defrost the fruit and drain the juice into a glass. Add more water to make a total of 250 ml.
- Place the dough on the pan, put the fruit on top and sprinkle with sugar.
- Bake at 180C for half an hour.

Yeast pie with frozen berries
The yeast recipe is the most nutritious. This baked good is especially appealing because it doesn't take much time to prepare. You'll need a standard set of ingredients, and a delicious addition to your lunch is ready.
Ingredients:
- Milk – 200 g;
- Yeast – 20 g;
- Salt – ½ tbsp;
- Sugar – 400 g;
- Any frozen berries – 1 kg;
- Flour;
- Vanilla;
- Sour cream – 210 g
Preparation:
- Prepare the dough. Dissolve the yeast and a cup of sugar in 100 g of warm milk. Add flour to create a pancake-like dough consistency.
- Place in a warm place to ferment, after covering the container with a bag and a towel.
- When the dough has risen, add flour, butter, milk, sugar, then margarine and eggs.
- Knead an elastic dough and leave for 30 minutes.
- Roll out the risen dough and place it in the pan.
- For the filling: sprinkle the pre-defrosted fruit (dried on a paper towel) with a glass of sugar for 15-20 minutes.
- Sprinkle the berries over the dough. Bake at 180C for 40 minutes.
