Berry desserts are generally considered healthy. And wouldn't it be wonderful to delight your family with not just deliciousness, but also a treat that's healthy? It's not just wonderful! It's superb! All that's left is to decide what to make and which berries to use.
There are hundreds of recipes for making berry-based desserts. This section of cooking is a treasure trove of diverse cooking methods, with several recipes for every berry available. All the recipes are delicious and healthy, but the key is to remember: the less heat treatment, the more vitamins are preserved.
Berry pudding
This dessert has many variations and can be made with any type of berry. So, every time you follow the same recipe, you'll get a different-tasting dessert.
To make this dessert, you'll need frozen berries—use whatever you like. Strain them through a sieve, then place the berry mixture in a saucepan with 1 liter of water and bring to a boil. Don't let it boil any further; just add 4-5 tablespoons of sugar.
While the dessert mixture is boiling, dissolve 3-4 tablespoons of cornstarch in cold water. Once the mixture comes to a boil, slowly whisk in the diluted cornstarch, bring to a boil, and let it simmer for a while until it thickens slightly.
Next, arrange the whole berries in the molds and pour the mixture over everything. Refrigerate for a few hours. The dessert is ready!
Mascarpone and berry dessert
This sweet can also be filled with different berries, most commonly raspberries. It's considered a summer treat because it has a light, airy texture and is very refreshing. To make 2 servings, you'll need:
- 200 g berries
- 200 g mascarpone
First, make powdered sugar; we need 60–70 grams, which is 6 tablespoons.
Grind the berries into a puree with 3 tablespoons of powdered sugar. You can add whole berries to the resulting puree. Mix the remaining half of the powdered sugar with the mascarpone. Next, place the puree and mascarpone into molds (a simple glass will do), alternating layers. You can also decorate the top with whole berries; your imagination is at its limit.
Mousse from berries
A delicious and refreshing summer mousse! Its recipe also allows you to use a variety of berries. So, to make the mousse, you'll need:
- 200 g sugar (or ¾ cup);
- 250 g berries (or glass);
- 15g gelatin;
- 2 glasses of water.
Any berries will do, whether fresh or frozen. Sort and mash them, then press them through a hair sieve.
Pour 2 cups of hot water over the resulting mixture. Bring to a boil and strain. Now add the sugar and gelatin to the juice, stirring constantly until the syrup boils.
Add the remaining berry puree to the prepared syrup and whisk until foamy. Once the mixture begins to thicken, quickly pour it into molds and let it cool.
Cannoli with berries
The recipe for this dessert is more complicated, but the result will exceed all your expectations!
To prepare you need to stock up on:
- 1 cup ricotta cheese;
- ½ cup mascarpone cheese;
- ½ cup powdered sugar;
- vanilla extract;
- orange zest;
- ground pistachios;
- sponge cake base;
- berries
Take 250 g of ricotta cheese and squeeze it through several towels. Transfer it to a bowl and mix. Add the mascarpone, powdered sugar, ¼ teaspoon of extract, and ½ teaspoon of grated orange zest. Mix thoroughly and add the pistachios.
Next, let's make the sponge cake. Cut it into small pieces and toast in the oven for a couple of minutes. Preheat the oven to 190 degrees Celsius (350 degrees Fahrenheit). Spread a little cream on each sponge cake and sprinkle with berries. You can leave the dessert as a cake or roll it into tubes.
Rose wine jelly
A delicious and unusual holiday dessert with an incredibly simple recipe!
For dessert you will need
- 250 ml dry pink wine;
- 100 grams of fresh berries;
- 50 grams of sugar;
- 10 g gelatin.
We begin by soaking the gelatin in cold water. Place the saucepan over medium heat, pour in the wine, and add the sugar. Stir occasionally, bringing to a boil. Then warm the gelatin and pour it into the wine. Set everything aside for now.
Take the berries, wash them, and cut them lengthwise. Arrange them in glasses or molds and pour the mixture over them. Refrigerate the dessert until it sets.
