A summer berry that everyone loves without exception. Rarely would a gourmet deny himself the pleasure of trying a wonderful raspberry dessert.

If you freeze the berries, you can enjoy them even in winter, recalling sunny days spent at the dacha or in a country house.

Wild raspberries are not much different from garden raspberries, except for more thorns, which have nothing to do with raspberry desserts. To create this dark pink masterpiece, we first need the berries themselves.

Raspberries are mild in taste and have a pimpled cap shape. This can be used as a decoration for cakes, ice cream, desserts, or sweet jelly with fruit pieces. Incidentally, this is where we'll start our list of easy raspberry desserts.

Raspberry jelly

If you don't want to spend a lot of time on jello, it's easier to buy a bag of jelly that just needs to be mixed with water. The raspberry flavor will be there right away. On the bag, you'll find a simple recipe for making these kinds of mixtures, which even a ten-year-old can make for themselves. This is a great option when guests call unexpectedly and say they're on their way. If you want to approach the whole process from A to Z, you'll have to spend a bit of time at the kitchen counter.

To prepare jelly you will need:

  • Gelatin
  • Water
  • Raspberry
  • Sugar
  • Raspberry syrup if possible

First, take a tablespoon of gelatin and soak it in cool, clean water. A full teacup will be sufficient. The gelatin will swell in this medium for several dozen minutes. During this time, you can peel and rinse ripe raspberries and mash them with sugar until smooth. Afterward, strain the mixture through a fine sieve, occasionally adding water to ensure the juice flows easily through the small holes. If you prefer a sweeter raspberry dessert, you can add maple syrup or raspberry syrup. The sugar should completely dissolve in the smooth mixture. The raspberry and sugar mixture should be thicker than regular fruit drink and several times sweeter, approximately like jam. The cloying taste will dissipate over time.

Watch the swelling jelly every 10-15 minutes, stirring it with a spoon to prevent the swollen crystals from sticking together. If you see a yellowish-golden liquid that undulates slightly when stirred, as if slowing down, it's ready. It's best not to use any of the remaining liquid at the bottom of the jelly, as otherwise you'll end up with unpleasant, tasteless lumps in the dessert.

Now comes the most difficult part of the entire preparation: continuously stirring the raspberry syrup, pour in the mixture we've made from gelatin and water. The mixtures should be thoroughly mixed and become a single whole.

Pour the mixture into attractive molds and add a few whole raspberries and a mint leaf to each. Refrigerate the molds, but don't freeze them, otherwise the gelatin will disintegrate and the raspberry dessert won't work.

The mold will take about two hours to set. During this time, you can greet guests, chat about business, and enjoy the main course. When it's time for dessert, you can serve your raspberry jelly in the molds, or you can invert the molds onto flat plates. The jelly will fall out of the mold upside down, revealing a delightful mosaic of berries.

Raspberry lazy cheesecake

Raspberries come in several colors: dark burgundy, scarlet, black (blackberry), yellow (amber), and green. This can also be used to create a beautiful and very light cheesecake.

Take:

  • Cookies or ready-made cake
  • Ripe raspberries of different colors
  • Cheese and curd mass
  • Chocolate

That's all you need to make a delicious raspberry dessert.

If you don't have a cake base and don't want to bake one, gather all the cookies you have at home and crush them into fine crumbs. Add soft butter and cocoa powder. Roll or press the resulting stiff dough into a pan that will hold your raspberry dessert. The edges of the pan should be deep, otherwise the cake won't be able to hold the filling.

Fill the prepared base with a cream cheese mixture mixed with raspberries. Another option for decorating the cheesecake is to layer the filling, alternating cream cheese mixture and berries. Once the pan is filled, decorate the dessert with crushed cookies or drizzle with melted chocolate.

Refrigerate the finished dish. After 2 hours, serve the raspberry cheesecake, garnished with ripe raspberries on top.

Smoothie

A thick raspberry smoothie is delicious in both summer and winter. You can customize the smoothie however you like. Raspberries are a natural companion to all wild and garden berries, and if you have a dragon's eye on hand, it won't ruin the delicious flavor of this nutritious smoothie.

Pack as many berries as you can use in an evening into a blender without limitation. Mix and ensure the berries turn into a thick puree, not a mushy consistency with bits of fruit in it.

For those with a sweet tooth, you can add sugar. It's best to do this immediately, while the berries are blending. Add milk to the resulting very thick and aromatic mixture at a ratio of 1:1. In hot weather, you can add crushed ice and garnish the top with a lemon balm or mint leaf.
