In ancient times, sour cream was made by skimming the cream from milk and letting it mature at a low temperature for three days. Today, sour cream is made from pasteurized milk and a starter culture containing lactic acid streptococci. These bacteria can give sour cream its unique aroma, color, and tart flavor. However, high-quality sour cream is made from cream, which is quite fatty. For this reason, real sour cream has a fat content of at least 30%.
