The first to try homemade ice cream were Chinese emperors. And this happened more than five thousand years ago. Today I'll share popular recipes for making this dessert at home.
A delicacy of venerable age
The prototype of the modern dessert was not particularly intricate: it consisted of ordinary snow, ice cubes, and fruit. However, the ice cream recipe was considered a closely guarded secret, and it was served only at the imperial table.
However, the Chinese weren't alone in conceiving such elegant uses of natural resources. Europe also had mountains, and enterprising Greeks and Romans, even in ancient times, organized "ice" expeditions to the high-altitude storehouses of the Alps. Special cellars were built to store perishable products in warm climates. Ice and snow were used to make fruit drinks and cool juice, wine, and milk.
By the time Marco Polo finally reached China, the ice cream recipe was no longer guarded so jealously. This allowed the traveler to bring it home and introduce it to his astonished compatriots. Naturally, only high-ranking nobles were still able to enjoy this amazing dessert: ice production in Europe was very expensive.
Incidentally, the Italians were the first to think of sweetening ice cream. An Italian, albeit in France, was the first to open an ice cream parlor. This happened in the 16th century. It took another hundred years for the recipe for the icy dessert to cross the English Channel and reach England. And it took another hundred years to cross the ocean: America only discovered ice cream in the 18th century.
Which ice cream would you prefer?
There's no point in arguing about which is better: store-bought or homemade ice cream. They're two completely different products, each with its own unique qualities.
It's easier, of course, to buy ice cream at a store, where they offer a wide selection: from small popsicles to giant tubs of vanilla, strawberry, and chocolate treats. At the temperature created in freezers, ice cream retains its original properties and flavor for a long time. So you don't have to worry about the quality of the ice cream.
But sometimes, on special occasions, you want to impress your family by making an exquisitely delicate delicacy yourself. Moreover, homemade ice cream has one undeniable advantage: it's preservative-free.
If you're lucky enough to have an ice cream maker at home—wonderful! But even without one, don't give up. Everything will work out! You can always find a suitable ice cream recipe that will allow you to create a true confectionery masterpiece at home.
A timeless recipe
The cold fruit drink sherbet is one of the predecessors of ice cream. It came to Europe from the East in the 16th century. In French, the Arabic word was transformed into sorbet or sorbet. Since then, this name has been used for frozen fruit puree.
Making this ancient delicacy at home is quite simple. All you need is some berries, like strawberries. Fresh fruit is washed, pureed in a blender, sweetened, placed in molds, and frozen. That's all there is to it.
But there's always room for improvement with an ancient recipe. For the easiest homemade ice cream, you'll need:
- 300 g ripe strawberries;
- 500 g yogurt (natural);
- approximately 200 g of sugar (it is better to add it to taste);
- 2 tbsp. water.
First, wash the strawberries. Then cut them into pieces, place them in a frying pan, add water and sugar, and simmer over low heat for 15 minutes. Stir occasionally.
Next, puree it in a blender and let it cool. Now, combine the strawberry puree with the yogurt and pour it into the container in which the sorbet will freeze. The recipe recommends removing the ice cream from the refrigerator every half hour and stirring. After two hours of this process, leave the sorbet alone until it's completely frozen.
The most delicious source of vitamins is ready! Before serving, arrange the ice cream in pretty bowls and decorate with mint and strawberry slices.
Creamy Ice Cream Recipe
Who can resist the smooth, creamy taste of ice cream? My mouth waters at the mere mention of it! So why deprive yourself of this indulgence? It's not difficult to make this exquisite treat at home. Just one note: if you don't have an ice cream maker, it's best to prepare this dessert in the morning, or at the very least, in the afternoon. We'll explain why later.
Before you begin the process of the sacred rite, you need to stock up on:
- cream - 400 ml (20% and 33% - 200 ml each);
- 4 egg yolks (they will act as a thickener);
- 70 g powdered sugar;
- a tablespoon of cognac;
- half a vanilla pod.
Recipe:
- Pour the cream into a saucepan, add the vanilla bean pulp, and bring to a boil. The cream should almost come to a boil. Almost.
- While the fire is doing its work, work on the yolks. Specifically, beat them thoroughly with powdered sugar.
- Pour the heated cream into the yolks, whisking constantly. Then return the mixture to the saucepan, return it to low heat, and simmer for a couple of minutes, stirring constantly, until thickened. The recipe warns strongly at this point: do not allow it to boil!
- Once the ice cream has thickened, remove it from the heat and stir it for a while longer—this will help it cool faster. Once it reaches room temperature, pour in the alcohol, transfer the ice cream to a lidded container (to prevent it from absorbing odors), and place it in the freezer.
- It's time to explain why you shouldn't put off preparing this cold treat in a regular freezer until the evening. The fact is, ice cream is fully ready in about 10 hours. For the first two hours, it needs to be removed from the freezer and stirred with a mixer every half hour. Then, every hour. In total, you'll need to stir the ice cream about six times. Only then can you finally leave the delicacy alone until it's fully ripened.
This delicate and flavorful homemade ice cream will surely delight both family and guests. There's just one catch: now they'll be constantly expecting this creamy treat.
Cottage cheese and orange recipe
There are countless ways to make ice cream at home. We suggest trying another unusual recipe based on cottage cheese. To make it, you'll need:
- 300 g 33% cream;
- 400 g of fat (18%) cottage cheese;
- 1 can of condensed milk;
- ½ cup sugar;
- 1/3 cup water;
- 50 g butter;
- 2 oranges;
- vanillin (bag);
- 2 tablespoons of white wine.
Recipe for making ice cream:
- First, prepare the orange syrup: combine water, butter, and sugar in a saucepan and bring to a boil. Then add the orange zest and juice, and bring everything back to a boil. Afterward, remove the mixture from the heat and add wine.
- While the syrup cools, beat the cottage cheese and condensed milk in a blender. Finally, fold in the whipped cream.
- All that remains is to form the ice cream: place the mixture in a mold, layering it with syrup.
No need to stir this homemade ice cream. After 10 hours in the freezer, this delicious cottage cheese, creamy, and orange dessert is ready.
