How to make classic sour cream cake

To make sour cream cake using the classic recipe, we will need:

For the test:

  • 6 chicken eggs;
  • 4 cups flour;
  • 3 cups of sugar;
  • 3 cups of sour cream with at least 20% fat content;
  • 1.5 teaspoons of soda;
  • 2 tablespoons raisins;
  • 2 tablespoons cocoa;
  • 2 tablespoons poppy seeds.

For the cream:

  • 700 grams of sour cream;
  • 1.5 cups of sugar.

Inventory: deep bowl, blender, baking pan with a diameter of approximately 22-22.5 cm, baking paper.

  1. Take 2 eggs and beat them with a glass of sugar until stiff, fluffy foam forms. This will take about 5 minutes;
  2. Add a glass of sour cream to the egg mixture and beat everything well again until you get a homogeneous mass;
  3. Dissolve half a teaspoon of baking soda in vinegar or lemon juice. Quickly pour the baking soda into the egg mixture;
  4. Next, the recipe tells us that we need to gradually, stirring constantly, add 1 cup of flour (with a slide);
  5. Add the raisins to the dough and mix thoroughly again. The recipe recommends doing this carefully, from the bottom up, as if rolling the raisins into the dough. If you simply start mixing, the dough will settle;
  6. Line a baking pan with parchment paper. Pour the batter into it and smooth it out carefully;
  7. Bake the cake in the oven for 30-40 minutes at 180 degrees Celsius. The recipe recommends checking for doneness with a toothpick – if it comes out clean, the cake is ready.
  8. Now it's time to make the chocolate cake layer. To do this, follow the same steps as with the first layer, but mix the cocoa powder into the dough along with the flour. Omit the raisins;
  9. Pour the chocolate dough into the pan and bake for 30-40 minutes at 180 degrees;
  10. Prepare the third layer – the poppy seed layer. Follow the same steps, but add poppy seeds to the dough along with the flour;
  11. Once all three layers are ready, set them aside. Now it's time to make the cream: beat the sour cream and sugar at the lowest speed. The classic recipe allows for the addition of lemon zest, cinnamon, or vanilla;
  12. Line a baking dish with two sheets of baking paper, edge to edge, and place the raisin-filled cake layer on top. Grease it thoroughly with cream;
  13. Place the chocolate cake on top and also coat it with cream;
  14. Lastly, place the poppy seed cake layer and generously spread cream on top and around the edges of the cake.
  15. The recipe now recommends decorating the dessert. You can garnish it with grated chocolate, chopped nuts, or fruit pieces.
  16. The sour cream cake recipe recommends not serving it immediately. Instead, let it sit and soak in the cream for several hours.
