About cottage cheese and apples

Each type of cottage cheese has its own consistency, so it's not a given that you'll need exactly the amount of flour recommended in the recipe: you might need to add a little more or less.

One more thing: to make the pie even more tender, it's a good idea to strain the cottage cheese through a sieve. This will break up the lumps, and the dough will become smooth and uniform.

A juicy apple filling can make a cottage cheese pie too moist—starch can help prevent this. Lightly dusting the dough with it will absorb the excess liquid. Semolina can be used for the same purpose. Also, any cottage cheese pastry should be cooled before serving.

And finally, about apples. The best varieties for pie are Renet Simirenko or Antonovka. They enrich it with a piquant sweet and sour flavor. But that's ideal. Any variety will do.

  • semolina – 1 tbsp;
  • 1 glass of sour cream and sugar;
  • 3 eggs;
