Helpful tips
To ensure your caramel turns out perfect, don't forget these basic tips. Stick to them, and you'll be just like a seasoned confectioner:
- Glucose syrup helps prevent sugar crystallization. Invert syrup can also be used instead.
- Never leave the caramel pot while it's cooking. The sugar can burn very quickly.
- Bring the cream to a boil, but do not let it boil, before adding it to the caramel. Ideally, it should be between 60 and 90 degrees Celsius (140 and 194 degrees Fahrenheit), otherwise the temperature difference could cause the caramel to bubble vigorously and spill over the saucepan.
- Finally, you can puree the mixture with a blender. This will make its consistency smoother and more delicate.
These simple recipes and tips will help you create a delicious treat that you can then add to pancakes, syrniki, ice cream, and other desserts. Delighting your loved ones with culinary masterpieces really is that simple!
