While baking pastries usually takes a long time, making a cake is a breeze. And the recipe for this dessert doesn't require any exotic ingredients—everyone has everything they need in their refrigerator. To add extra juiciness and flavor to this dessert, we suggest making a candied fruit cake. His recipe differs from the usual one only by the addition of candied fruits and other additives to taste.

Classic recipe

Ingredients:

  • Eggs – 4 pcs.
  • Sugar - 220 gr.
  • Kefir or sour cream (low-fat) – 200 ml.
  • Butter – 150g.
  • Flour – 350-400 gr.
  • Vanillin – 1 packet.
  • Candied fruit – 250 g (if you decide to add nuts or raisins, reduce the amount of candied fruit).
  • Baking powder – 1 packet.
  • Powdered sugar – 30-50 g (for decoration).

Recipe:

  1. Preheat the oven to 180 degrees Celsius. Grease and flour a baking pan, or spray with baking spray.
  2. Mix sugar and eggs until smooth.
  3. Add vanillin and kefir and mix well again.
  4. Melt the butter in the microwave, then pour it into the egg-kefir mixture and bring to a smooth consistency.
  5. Mix the baking powder with the flour and sift both ingredients into the egg-butter mixture. The resulting dough should have a consistency similar to medium-thick sour cream.
  6. The next step is to add candied fruit (and other additives, if you decide to replace some of the candied fruit with nuts or raisins) to the dough and spread it evenly throughout the dough with a spoon.
  7. Place the resulting dough into the prepared pan and bake in the oven for 40-50 minutes (depending on the oven).
  8. Check the doneness of our dessert with a long toothpick five minutes after inserting it. If runny batter remains on the center of the cake, you'll need to extend the cooking time by another 7-10 minutes.
  9. Once the baked goods are done, remove the pan and carefully invert it onto a serving plate. The finished dessert will easily slide out of the pan.
  10. Immediately dust the resulting treat with powdered sugar. If desired, you can mix the powder with lemon zest or cinnamon for decoration.

Recipe:

  1. Mix sugar and eggs using a mixer or by hand.
  2. Melt the butter and gradually pour it into the sugar-egg mixture, continuing to stir.
  3. Then add vanilla, salt, and lemon juice to the resulting mixture. Mix thoroughly.
  4. Sift the baking powder and flour into the prepared mixture and mix until smooth.
  5. The next step is to add the candied fruit. Spread it evenly throughout the dough.
  6. Place the resulting dough into a microwave-safe mold or molds so that it fills the mold 2/3 full, as it will rise well during baking.
  7. Place the mold/molds in the microwave for 10/7 minutes at 850-1000 W.
  8. After the baking time is up, check the doneness of the muffins with a toothpick or matchstick. If the inside of the muffins is still raw, return them to the microwave for another 2-3 minutes.
  9. Once the baked goods are ready, carefully remove them to a plate and decorate with powdered sugar or lemon zest to taste.
