Homemade fruit ice cream would be very appropriate. Moreover, you can prepare it at home, quickly and, most importantly, from the products and ingredients that you have on hand.
Unlike the familiar ice cream, frozen ice is considered a low-calorie product. The dessert typically contains frozen fruit juice, either store-bought or concentrated homemade compote. It quenches thirst perfectly and quickly lowers body temperature.
How to make a cold dessert
The idea of freezing fruit juice is not new. Even in ancient times, chefs tried to create a pleasant, cool, and delicious dessert using natural juices from berries or fruits. This delicacy was especially popular among nobles, especially in the Arab East and countries with hot climates.
Anyone can create a similar masterpiece at home these days, all you need is a refrigerator, fresh fruit, homemade compote, or a carton of store-bought juice. You can use any fresh berries or fruits, packaged store-bought juice, or frozen fruits and berries. If you decide to make your own, strawberries or cherries are perfect for ice cream. Frozen ice and watermelon or melon juice will create a unique flavor.
If you don't have either on hand, you can solve the problem with store-bought juice. This way, you can achieve a surprising range of tropical fruit flavors, creating an exotic frozen cocktail. To enhance the fruit texture, starch or gelatin is added as a stabilizer before freezing. The resulting mixture is poured into ice cream bowls or ice cream makers, special ice cream molds, for subsequent freezing.
One of the unique features of making frozen fruit juice is the ability to vary the color scheme. Using juices from different fruits, you can create multi-layered and multi-colored ice cream, each layer with its own distinct color and flavor.
Making frozen ice from fruit juice
Using your imagination and the right ingredients, you can quickly and easily create a unique fruit dessert that's cold and delicious. The basic ingredients for making one serving of ice cream are:
- natural fruit and berry juice - 250 g;
- granulated sugar – 300 g;
- gelatin - 6 g;
- starch – 20 g;
- water - 450-500 ml.
If desired, you can add citric acid to the fruit mixture to taste. You can make your own juice by squeezing the required amount of liquid from natural fruits and berries, using homemade compote, or buying ready-made juice from the store.
The calculation of ingredients is given in relation to one kilogram of finished ice at the output.
The preparation method isn't particularly secret. Gelatin must be soaked first, and starch must be dissolved in cold water. The amount of water used for this purpose is calculated based on the recipe's instructions. Sugar must be dissolved in warm water, which is then brought to a boil. Add the stabilizers to the resulting syrup and boil for 2-3 minutes. After the syrup has cooled, mix it with the prepared juice.
After stirring, strain the liquid through a sieve or cheesecloth, cool, and pour into prepared molds. Place the prepared portions in the freezer and leave for 2-3 hours.
After the specified time, the sweet and delicious cold dessert will be ready and can be served directly to the table.
