Honey cake can be considered a fairly simple, but very festive dish. If you bake it in a beautiful pan and decorate it just right, you'll be able to put a photo of this delicacy on the cover of a magazine. This simple recipe allows you to make the dough in 10-15 minutes, and the rest is just a matter of baking. So, if you have guests at the door, you can prepare a delicious and very healthy dessert for them in an hour.
Features of honey cake
The first records of honey cakes flavored with spices date back to 350 BC. The recipe then included a barley purée, which was mixed with honey. A photo of these first cakes more closely resembles modern gingerbread.
Typically, yeast dough or sponge cake is used to bake this dessert today. In Germany, for example, only a yeast-free pastry is considered a cake. In Russia, honey cake is very popular and is baked both for holidays and every day. It can be made with or without sugar. Moreover, honey cake baked using the latter method is considered more dietary, and therefore healthier.
A more interesting aspect is the additions to the dough. You can include literally anything in the recipe. Baked goods with candied fruit, nuts, seeds, dried fruit, and even fresh berries will be delicious and even more original.
Sugar-free honey cake
This is a recipe for a simple cake that's baked in a similar way to gingerbread. The dough is completely sugar-free, but the sweetness is just right. You'll need: 1.5 cups (250 ml) flour, 2 eggs, 1 teaspoon baking soda, 50 g butter, 1 whole lemon, a cup of honey, a pinch of cinnamon, and 2 tablespoons milk.
Home cooking:
- Grind the lemon whole in a blender.
- Melt honey and butter over low heat and mix with lemon pulp.
- Combine flour, cinnamon, baking soda and gradually stir in the honey-lemon mixture.
- Milk and eggs are beaten separately and then added to the dough.
- Bake at 160 degrees for 40-45 minutes.
If you'd like to slightly enhance the recipe, you can sprinkle the dough with crushed nuts. Then you won't have to worry about decorating the finished cake.
Classic Honey Cake
The classic honey cake recipe contains sugar. Typically, the ratio of sugar to honey is proportional. Ingredients: 1.5–2 cups flour, 2 teaspoons baking powder, 2 eggs, 0.5 cup sugar, 100 g honey, 150 g butter.
Home cooking:
- Melt the butter and honey (if it is candied) over low heat without boiling.
- While they are cooling, beat the eggs with sugar.
- Add butter and honey to the whipped mixture, stirring constantly.
- Lastly, add flour with baking powder and knead the dough.
- Fill the pans with batter. Important! The raw batter in the pan should not be more than 1.5 cm thick, otherwise it will not bake properly. Don't worry about the cake's height; it will rise very well during baking – 2-2.5 times its original size.
- Bake the dessert at 180 degrees in a preheated oven for about half an hour.
- Decorate the finished baked goods by sprinkling them with powdered sugar or drizzling them with melted chocolate.
Spiced honey cake
Spice lovers will love this recipe. Its photo can't convey the captivating aroma that entices you to cut off one piece after another.
Ingredients: 350 g wheat flour, 230 g honey, 150 ml boiled warm water, 120 g raisins, 0.5-0.75 cups brown sugar, 50 ml vegetable oil, 2 eggs, 10 g each of ground cloves and cinnamon, 20 g ground ginger.
Preparation:
- Mix flour, sugar and spices in a bowl.
- Pour melted honey, butter and water here.
- Stir in the eggs one by one.
- Mix everything and beat with a mixer until smooth.
- Lastly, add the raisins and mix thoroughly.
- Bake in a greased pan in an oven preheated to 200 degrees for approximately 1 hour.
