Most people imagine a cupcake as a simple gingerbread cake with raisins and perhaps nuts. But there are many variations of this dessert—lemon, coconut, chocolate, and so on. Today we'll look at a recipe for making chocolate cake.

Surprisingly, these gingerbread cookies can be very versatile. The first recipe is a classic chocolate cake with the same frosting. This recipe is completely simple, takes about an hour including baking, and the result is worthy of being photographed and eaten the same day!

Ingredients for the base:

  • Eggs – 2 pcs. (small).
  • Kefir or low-fat sour cream – 400 ml.
  • Sugar – 350 gr.
  • Vegetable oil – 4 tablespoons.
  • Flour – 2 level cups (300-350 g).
  • Cocoa powder – 4 tablespoons (unsweetened).
  • Baking powder – 2 teaspoons.

Ingredients for the glaze:

  • Butter – 30g.
  • Heavy sour cream or cream – 100 gr.
  • Sugar – 80-100 g (to taste).
  • Cocoa powder – 100 gr.

Base recipe:

  1. Preheat the oven to 180 degrees Celsius. Prepare the baking pan by greasing it with butter and lining the bottom with parchment paper. Alternatively, use baking spray.
  2. Mix kefir/sour cream with eggs, gradually pour vegetable oil into this mixture and stir until smooth.
  3. In a separate bowl, sift together the flour and baking powder. Add the cocoa powder and sugar and mix thoroughly.
  4. Add the dry mixture to the kefir-oil mixture and stir until completely smooth.
  5. The next step is to pour the dough into the pan and place it in the oven for 40-45 minutes.
  6. Five minutes before the end of cooking, use a toothpick to check if the dessert is cooked through. If there's still batter on the toothpick, bake for another 7 minutes. Don't worry if the crust cracks on top—that's normal; we'll be frosting it later.
  7. Once the cake has risen, turn off the oven, remove it, and let it cool. Meanwhile, let's make the glaze.

Glaze recipe:

  1. Combine butter and sour cream/cream in a small saucepan with a thick bottom.
  2. Place the pan on low heat and begin stirring vigorously, gradually adding sugar.
  3. Once we have added all the sugar, add cocoa powder to the mixture and continue stirring until the sugar is completely dissolved and the mixture begins to boil.
  4. As soon as the mixture boils, immediately turn off the heat, but do not stop stirring the mixture until it cools slightly.
  5. Place the cooled base on a plate and begin to coat it with glaze so that the top is completely coated and a little glaze flows beautifully down the sides.

The cake is ready! Now you just need to wait a little while for the glaze to set, and you can enjoy this magnificent dessert! Just don't forget to take a photo of your creation before cutting it.
