Muffins made by Liza Glinskaya
Today we invite you to consider three muffin variations from Liza Glinskaya, who, having won the Ukrainian competition "MasterChef" in 2012, trained at the Paris branch of the world culinary school. Now Lisa is happy to share her acquired skills with everyone.
Chocolate
The first recipe is for chocolate lovers. But these aren't just any chocolate muffins: they're elegantly complemented by candied cherries. Cherries generally pair beautifully with chocolate. To make these mouth-watering muffins according to Liza Glinskaya's recipe, you'll need:
- dark chocolate - 80 g;
- premium flour - 200 g;
- sugar - 100 g;
- egg - 1 pc.;
- baking powder - 2 tsp;
- milk 2.6% fat - 200 ml;
- butter - 45 g;
- candied cherries - 100 g.
Recipe:
- Prepare a double boiler and melt the butter and chocolate in it. Cool to room temperature.
- Combine all dry ingredients in one bowl and the liquid ingredients in another. Then, pour the liquid mixture over the dry mixture and combine using a regular spoon, stirring 15-20 times. The recipe does not recommend using a mixer.
- Lastly, add the candied fruit, stirring constantly. If using metal molds, grease them first and then dust them with flour. Then, spread the batter evenly, filling the molds completely. Sprinkle the muffins with sugar and bake for 18-20 minutes. The recipe recommends preheating the oven to 205 degrees Celsius (405 degrees Fahrenheit).
Berry
Berry baked goods are considered one of the most popular. Liza Glinskaya didn't ignore them and offered her own version of berry muffins. To make them, you'll need:
- blueberries and currants - 100 g each;
- premium flour - 250 g;
- milk 2.6% fat - 150 ml;
- sugar - 200 g;
- egg - 1 pc.;
- salt - ½ tsp;
- baking powder - 2 tsp;
- a quarter of a nutmeg;
- vegetable oil - 100 g.
Any recipe will first recommend washing the berries and then drying them. This one is no exception. The rest of the steps are exactly the same as the previous recipe: mix the dry and liquid ingredients separately. Then add the liquids to the dry ingredients and combine them with a spoon, rotating them 15-20 times.
Now divide the mixture into two halves. The recipe calls for adding currants to the first half, and blueberries to the second, after first coating them in flour (this ensures even distribution). A couple more stirring movements, and it's ready.
After this, you need to place the muffins into the molds, filling them completely with batter, sprinkle with sugar and bake at the same temperature (205 degrees) for 18-20 minutes.
Salty
The following baked goods are unique: they're not traditionally sweet, but savory. These unusual muffins are sure to please cheese and bacon lovers. To make them, you'll need:
- bacon - 80 g;
- 1 clove of garlic;
- a couple of sprigs of dill;
- 100 g of hard cheese (the recipe recommends using Russian);
- premium flour - 250 g;
- 2 eggs;
- milk 2.6% fat - 170 ml;
- salt and sugar - ½ teaspoon each;
- baking powder - 2 tsp;
- vegetable oil - 70 ml.
Muffins are prepared as follows:
- Mix all the dry ingredients in one bowl and the liquid ingredients in another. Add chopped dill and crushed garlic to the liquid ingredients.
- After this, the liquid contents are mixed into the dry mixture. No need to use a mixer.
- Once the flour is completely moistened, add the cheese, cut into small cubes. Mix everything thoroughly again.
- Prepare the molds by greasing and dusting them with flour. Fill the molds with batter and decorate: insert a "rose" made from a slice of bacon into each.
- Bake the savory muffins for 20-25 minutes at 405 degrees Fahrenheit.
