Prepare the dough

Some time before preparing the dough, take the eggs and milk out of the refrigerator so that they are at room temperature during cooking - this will improve the quality of the dough.

So, take a deep, clean bowl, crack two eggs, and add a cup of sugar. Beat with a mixer. Then pour in a cup of milk. Beat the ingredients again with a mixer until fluffy and smooth. Then pour in three tablespoons of sunflower oil and beat with the mixer again. Dissolve the baking soda in vinegar or lemon juice and add it to the bowl. Finally, add the flour and mix the dough. Don't worry if the dough turns out quite runny while following the recipe; this is normal. The dough should be similar in consistency to low-fat sour cream.

Take out the muffin tins and grease them with sunflower oil or butter, dusting each with flour. Fill the tins with the batter. Bake the dessert in a preheated oven at 180 degrees Celsius.

Bake the dessert for about 30 minutes. The milk cake will be ready when it's golden brown. Also, check for doneness by piercing the dough with a toothpick or matchstick. If the matchstick comes out clean, the cake is ready.

Decorating cupcakes

A simple pastry like milk cupcakes can be transformed into a festive dessert by decorating the top. For decoration, prepare cream and chocolate icing.

Frosting recipe: Pour half a can of boiled condensed milk into a clean bowl and beat with a mixer for several minutes with 200 grams of melted butter. Then add 200 grams of sour cream and beat again with a mixer. Then add 50-100 grams of crushed nuts and mix thoroughly. The frosting is ready. Make a cone with a pointed end from a piece of waxed or parchment paper; this will be a "piping bag." Fill the bag with frosting and beautifully decorate the tops of the milk cupcakes.

Now for the chocolate glaze recipe: break 100 grams of dark chocolate into a saucepan, then add about 50 grams of butter. You can also substitute 3-4 tablespoons of cocoa powder for the chocolate. Place the saucepan over low heat, stirring constantly until the chocolate is completely melted. Mix until smooth. Then carefully pour the glaze over the creamy tops of the milk-based cupcakes. With this cream, the cupcakes become a luxurious and very filling dessert!

You can also make a lighter cupcake frosting, like a meringue frosting. This frosting recipe is incredibly simple. It always turns out great! And you can use it to create a variety of flower designs on cupcakes.

The recipe consists of: 300 grams of jelled sugar 2:1 (sold in stores, pay attention to the consistency, you need 2:1), 150 ml of cold water, 3 egg whites, the fresher the whites, the better.

Using a mixer, beat the egg whites until foamy. Place the sugar in a saucepan, add water, and simmer over low heat until the sugar content is reduced by half. Once the sugar has reached this point, immediately pour it into the egg whites in a thin stream, whisking with a mixer. The cream will be very thick. Place it in a folded waxed paper cone and spread it on top of the milk cupcakes.
