Vanilla-Chocolate Striped Muffins
Muffins are a type of baked good somewhat similar to cupcakes. They are traditionally made smaller, using smaller-diameter pans. You might think that Zebra muffins have a complex recipe, which is why they have such an interesting color as in the photo. But, in fact, if you follow certain simple rules, which are detailed in the recipe, you can easily make exactly the same “striped” muffins.
Making muffins
So, to make delicious homemade muffins, we will need (serving for 6 pieces):
- 200 grams of wheat flour (maybe a little more);
- 200 ml sour cream or kefir;
- 2 teaspoons baking powder;
- 150 grams of sugar;
- 2 teaspoons vanilla sugar;
- 2 eggs;
- 2 tablespoons cocoa;
- 100 grams of butter.
For the dough to turn out well, all the ingredients must be at the same temperature. Also, if we're talking about butter, for example, it's much easier to work with when softened. So, we cut it into small pieces and place them in a bowl. Mix regular sugar with vanilla and add to the butter. Cream the butter and sugar thoroughly. Then add the eggs and mix well. Pour the kefir or sour cream into the same bowl and mix again.
This recipe, like many others, requires that the dairy products and eggs used in the preparation be as fresh as possible. This is the key to delicious baked goods. As for kefir, the higher its fat content, the better.
Next, we sift our flour. As you know, sifting oxygenates the microscopic particles of wheat, resulting in a fluffy, airy dough. After sifting, mix the flour with the baking powder and add it to the bowl with the remaining ingredients. It's best to add it gradually, stirring constantly, until the dough is smooth and lump-free. As for consistency, the recipe calls for a thin consistency.
Then we divide it into two parts. Sprinkle cocoa powder into one, and leave the other white. Incidentally, at this stage we can even make our cupcakes rainbow-colored: divide the dough into several parts and add food coloring to each. Then, proceed with this dough as with regular dough.
Take your muffin tins. If you're using paper muffin tins, you don't need to grease them. If you're using silicone or another material, grease them with oil. Next, spoon the batter into the tins in the following order (approximately one tablespoon at a time): dark, light, then dark. Adjust the amount of batter based on the size and depth of your muffin tins, as they should be slightly more than half full. This is because the recipe calls for baking powder to help the muffins rise.
So, we've filled the muffin tins. Next, we bake our future baked goods in the oven at 180 degrees Celsius. As for baking time, on average, the muffins take 25 minutes to bake. That's what our recipe calls for. The baking time will vary depending on the size of the muffin tins. Once the muffins are baked, we take them out, let them cool (it's unhealthy to eat hot batter), and then serve. The photo shows an example of how to decorate the dessert.
Glaze for decoration
To make the muffins even more delicious and appealing, you can make some chocolate glaze and drizzle it on top. Here's the recipe:
Mix three tablespoons of sugar, cocoa, milk, and 50 grams of butter. Place over heat and, stirring constantly, bring the mixture to a boil. Let it simmer for one minute and turn off the heat. Once the glaze has cooled, pour it over the baked goods.
