For a long time, we've been accustomed to calling delicious baked goods with a pleasantly creamy dough "muffins." Only recently has it become known that a similar culinary dish is called a muffin and that it appeared in Western Europe as early as the 11th century. Muffins were first mentioned in Britain, where French chefs and culinary experts excelled in preparing delicious, soft bread.
In appearance, the muffin we are accustomed to was a small pastry, similar in taste to regular bread made from coarse rye flour. Low-calorie ingredients were common back then and often became the main ingredients in many culinary dishes. In this regard, modern pastry chefs have not broken with tradition, so many muffin recipes call for the use of dietary ingredients.
A distinctive feature of these baked goods was their quick preparation, which led to the rise in popularity of muffins. These small, appetizing pastries are considered a very practical and satisfying breakfast food for good reason. The only problem chefs encountered when preparing muffins was their monotonous flavor and rapid staleness. Cheap flours were typically used for baking, and baked apples, hazelnuts, and raisins were used as fillings.
Today, the situation has changed significantly, and in order to make delicious and original cakes with your own hands, all you need is a little patience and effort.
Making muffins with your own hands
Today, there are two types of muffins: English and American. English muffins were made with yeast dough, while American bakers emphasized baking with leavening agents.
Low-calorie muffins, considered an essential part of a healthy diet, are easy to make at home. The muffin-making process is versatile and very simple, making it easy to master even without the necessary experience. Muffins' popularity today is due to their ease of preparation and minimal time investment.
Every homemaker can make diet-friendly cakes in her own kitchen. To do so, you'll need the following ingredients:
- butter - 200 g;
- low-fat cottage cheese - 250 g;
- two glasses of flour;
- chicken eggs - 2 pcs.;
- a glass of granulated sugar;
- raisins, candied fruits or other filling;
- one teaspoon of baking powder and 1-2 g of table salt.
The dough is prepared as follows. First, soften the butter, then add granulated sugar, eggs, and cottage cheese to the butter mixture. Thoroughly mix the resulting mixture until smooth, and only then add the flour and baking powder to the same bowl. When tasting the mixture, you can add salt to taste.
The result of our actions should be a soft and smooth dough, into which you can now add raisins or other ingredients as a filling.
The cakes must be baked in special molds, which are pre-greased with butter and lightly dusted with flour. A portion of the dough is placed in each mold, filling it to a third of its capacity. The filled molds are placed on a baking sheet and placed in an oven preheated to 180°C.0The baking process takes no more than half an hour, after which the baking sheet with the finished muffins should be removed.
