A unique yogurt cake recipe
Yogurt is a delicious and healthy snack, breakfast addition, or simply a treat. But it turns out that many professional bakers use this healthy product not only to satisfy hunger but also to create fluffy baked goods that taste delicious and instantly melt in your mouth. That's why every renowned pastry chef knows how to make a delicious yogurt cake using his own unique recipe.
What's the secret to yogurt-based baked goods, and why do almost all sweet-tooths treat them so reverently and tenderly? It's simple! Soft, fluffy, and moist—three words that perfectly describe any baked good made with this product.
Lemon cake
Lemon yogurt cake is the perfect recipe for those who love the bright citrus aroma and spongy texture.
For the dough (*240 ml glass):
- premium wheat flour - 1.5 cups *
- baking powder - 1.5 tsp
- natural yogurt - 1 cup
- white sugar - 1 tbsp
- fresh chicken eggs - 3 pcs.
- lemon zest
- vanilla
- vegetable oil - 1/2 cup
- powdered sugar
For the syrup take:
- lemon juice - 1/3 cup
- sugar - 1/3 cup
Beat cold eggs thoroughly with granulated sugar. Then, according to the recipe, when the mixture begins to thicken, pour in the yogurt, add vanilla sugar or vanilla extract, and lemon zest, and mix thoroughly.
Slowly whisk in the flour and baking powder until smooth. Add the vegetable oil toward the end of cooking.
Line a cake pan with parchment paper soaked in butter. Pour the batter into it. Then, as the recipe recommends, preheat the oven and bake the yogurt cake for an hour at 170-180 degrees Celsius (350-375 degrees Fahrenheit).
While the buns are baking, prepare the syrup. Combine the lemon juice and sugar in a saucepan and cook until the sugar is completely dissolved.
Once baked, remove the cake and pierce it with a wooden skewer. Then, without removing it from the pan, pour syrup over it. Once cool, remove and serve.
Almond cake
Another very simple, and most importantly quick recipe using natural yogurt is a fragrant almond muffin.
To prepare you will need:
- wheat flour - 180 g
- fresh chicken eggs - 2 pcs.
- white sugar - 120 g
- plain yogurt - 200 g
- butter - 50 g
- baking powder - 1.5 tsp
- a pinch of salt
- crushed almonds - 150 g
Preparing the dough takes just minutes. To do this, beat the eggs with sugar, adding a pinch of salt.
Melt the butter in a saucepan and pour in the yogurt. Then, as the recipe suggests, slowly whisk in the beaten eggs, stirring vigorously.
Sift the wheat flour into the mixture, a little at a time, and stir. Finally, add the crushed almonds. Don't chop them too finely; simply cut the almonds into quarters.
Grease muffin tins and pour the batter into them, filling them a little more than halfway. Place the tins in the oven and bake the muffins for about 20 minutes at medium heat.
Traditionally, you can check the doneness of the baked goods with a toothpick or skewer. If desired, you can top the cake with a sweet glaze or cream.
