Spring is the season when you hear more and more talk about ice cream. This pleasant, refreshing dessert offers relief from the heat that's just around the corner from summer. This sweet treat is loved by both adults and children. It's sold in stores, from food trucks in parks, and served in cafes and restaurants.
Many establishments, however, have begun offering a rival to classic ice cream: Italian gelato. The land of pasta is the birthplace of this delicacy. What is gelato? Why is it popular not only in Italy but all over the world? And, most importantly, how is it made? Read my article.
Gelato Ice Cream: What is it?
Gelato, or gelato (from the Italian gelato, meaning ice cream), is a classic Italian hand-made ice cream. Craftsmen create a delicate, creamy dessert with a unique flavor and aroma.
The history of gelato dates back to the Early Middle Ages. Clearly, the first versions of this cold dessert were significantly different from today's versions. There are two legends about its origins.
- According to the first, it was created by Catherine de' Medici's court chef, Ruggeri. He created an exquisite sorbet-like dessert that the queen so loved that she took the pastry chef with her to France. At the wedding of the Medici and Henry II, guests were treated to this very dessert.
- The second legend claims that the classic Italian delicacy was invented by the painter and architect Bountalenti. He is credited with inventing the world's first ice cream maker. It was in this maker that Bernardo prepared "Florentine cream" using sabayon in 1565 for the wedding of the Spanish King Philip II.
There's still no gelato industry. It's made in specialized workshops called gelaterias and served immediately after production. The first such establishment opened in 1800 in Italy on Via Uffici del Vicario. It still serves locals and visitors to the city. Pope John Paul II once visited "Giolitti."

What is the difference between gelato and regular ice cream?
The Italian word "gelato" translates to "ice cream" in Russian, but these two desserts have virtually nothing in common. Their main differences are:
- the fat content in gelato is 3–8%, in ice cream – 10% and higher;
- The churning speed for ice cream is high, while for gelato it is low;
- Gelato has a denser structure - it contains only 25% air, while ice cream contains more than 50%;
- Unlike ice cream, gelato contains a lot of milk and relatively little cream and yolks, often without the latter at all;
- gelato melts faster;
- Gelato has a more intense flavor;
- Gelato flavors are much more varied, for example, there are versions of the dessert made from vegetables, spices, and drinks.

Preparation
Pour milk into a deep bowl, add cream and 125 grams of sugar.
Heat the mixture until fine bubbles appear. Remove from heat and add vanilla extract.
Combine the yolks and the remaining sugar. Beat until creamy.
Pour a little of the hot mixture into the yolks and beat for 1–2 minutes.
Pour the yolk mixture into the milk-cream mixture in a small stream, whisking continuously.
Heat the mixture over high heat to 85°C (175°F), stirring constantly. If you don't have a thermometer, keep an eye on the surface of the cream—it should bubble and become thick and viscous.
Let the mixture cool, place the saucepan with cream in cold water.
Transfer the cream to a freezer-safe container and place it in the freezer. After 1.5 hours, remove the ice cream and puree it with an immersion blender. Repeat this process 3-4 times over the course of 3 hours.
