Cooking sweets with egg yolk
Content
There are many recipes for various delicious dishes made from egg yolks or whites, so be sure to try them, and you won't be left indifferent. This dessert made from just egg yolks is very easy to make, it turns out soft and tender, and surprisingly beautiful. Many people are familiar with the classic dessert Panna Cotta, which can also be made using egg yolks.
Vanilla panna cotta
Let's take:
- 350-400 ml heavy cream;
- 150 g sugar;
- 2 yolks (without whites!);
- 15 g gelatin;
- Orange or other fruit;
- Vanillin.
The dessert is prepared like this:
- First, soak the gelatin in water so that it swells.
- Take a saucepan and combine almost all the cream with sugar and a pinch of vanilla. Set aside a few tablespoons of the cream for later use. Place the saucepan over low heat and bring the mixture almost to a boil.
- Combine the 2 egg yolks, the remaining cream, and gelatin and add to the mixture on the stove. Bring to a boil again, but do not let it boil vigorously; stir constantly!
- Now you can remove the saucepan from the stove and let the creamy vanilla mixture thicken slightly. Then beat it with a mixer on high until it becomes fluffy and ready to pour into the molds.
- Place a finely chopped orange (or any other fruit) in the bottom of each mold and pour the cream mixture over it. Refrigerate. Panna cotta requires at least 3 hours of chilling. Then enjoy!
If you have a lot of yolks left over after using the whites, you can make a soft, sweet cream that can be used to decorate a cake or as a standalone dessert with fruit, nuts, or ice cream.
Cream on yolks
We will need:
- 100 g butter
- 170-180 g of sugar
- 5 egg yolks
Recipe:
This is the simplest yolk cream. Simply beat the yolks with sugar until smooth, then mix in softened butter. Beat the mixture with a mixer and you're done!
Depending on how many egg whites you used for another recipe, the amount of yolks in this cream can easily be increased or decreased, proportionally changing the other ingredients.
Butter cream
There's also a second recipe for a more complex yolk-butter cream. Let's take:
- 4 yolks (no whites!)
- 100-120 g of sugar
- 2 tsp starch
- 3 tsp cocoa
- 200 ml of milk
- 200 g butter
How to cook:
- Beat the yolks with sugar and cocoa, add starch.
- Bring the milk to a boil and carefully pour it into the resulting yolk mixture.
- Pour the mixture into a saucepan and cook over low heat until thickened.
- When the mixture has cooled, mix it with softened butter, and the cream is ready!
Classic dessert eggnog
For eggnog you will need:
- 2 yolks;
- 5 g instant coffee;
- 3.5 tsp sugar.
Preparation:
Take two eggs and separate the yolks from the whites. We'll only need the yolks. Beat them with a mixer until foamy, then gradually add sugar, continuing to beat.
Finally, add the coffee and whisk until completely dissolved. Enjoy the finished dessert drink immediately!
An unusual dessert made with yolks called "Royal Fried Eggs"
Ingredients:
- 6 yolks
- 2 tbsp. sugar
- 1 cup of water
- Cinnamon
- 30 g cognac or rum
How to cook:
- Separate the yolks from the whites and set the whites aside—we won't need them. Beat the yolks vigorously with a mixer (at least 5 minutes) and pour them into a greased frying pan or baking dish. Place the dish in the oven and bake until the yolks are baked, keeping in mind they should remain fluffy.
- Let's make sugar syrup. Add the required amount of water and sugar to a saucepan, along with a little cinnamon, and bring to a boil.
- Chop the baked yolks to your liking and add them to the hot sugar syrup. Let the mixture cool thoroughly.
- Add a shot of cognac or rum to the yolk-sugar mixture. This will add an even more piquant flavor to the dessert. You've probably never tried such an unusual dessert before, so try it now!
While egg white treats are more common, you can also make interesting and delicious desserts with egg yolks. Now you don't have to throw away leftover ingredients; you can use them wisely, so the whole family will be happy. Whether you're making hot eggnog for the night or a sweet panna cotta, your culinary talents and practicality will be appreciated, and the dessert will become your signature dish!
