Banana Muffins or Tropical Bread
The cake gained immense popularity in England, Switzerland, Germany, and the United States. The photo shows just one preparation method. However, over its centuries-long history, it has evolved into thousands of variations in recipes, ingredients, and cooking techniques, both in the oven and microwave. Furthermore, every homemaker, when preparing delicious cakes, tries to bring something unique, something new and unusual to the recipe.
English version
In England, fruitcakes are traditionally served with morning tea. Candied fruit, raisins, or nuts are often added, but fresh fruit is also common. Ideally, this dessert should be made in a brick-shaped mold, as shown in the photo, but if you don't have one, a round one will do.
The English banana muffin recipe is interesting because it includes oatmeal, making it a nutritious and healthy breakfast even for children.
To prepare you will need:
- whole grain flour - 180 g
- oatmeal - 60 g
- softened butter - 100 g
- granulated sugar - 110 g
- large chicken eggs - 2 pcs.
- bananas - 3 pcs
- baking powder
- a pinch of cinnamon
- lemon zest - 1 tsp (heaped)
Mix all dry ingredients: oats, flour, cinnamon, baking powder, and lemon zest. Add the eggs, lightly beaten with sugar, as shown in the photo. Stir the mixture thoroughly, then add the softened butter and mashed bananas. Once the dough is mixed, add the cinnamon and let it rest for a few minutes.
While the dough is resting, the recipe says, generously grease the pan with butter and prepare the oven. The ideal oven temperature is approximately 180-200 degrees Celsius (350-400 degrees Fahrenheit). Bake the well-rested dough for 1 hour. Around the 40-minute mark, cover the top of the cake with foil, as shown in the photo, to create a thinner, more delicate crust.
Cut the finished banana muffin into slices and serve with hot tea, cocoa, or milk. Simply the perfect breakfast. This recipe is a must-have for every home cook.
