A recipe for a simple, yet delicious and elegant cake should be in every cookbook. After all, we've often had guests almost at the door, but there's simply no time to prepare something sweet to go with the tea. This is precisely why there are recipes for holiday cakes that can be prepared quickly.

A delicious cake can be baked using the most common ingredients. The key is deciding what kind of cake you want: layered, sponge, fruit, or perhaps cream. Thanks to the abundance of recipe options, you can whip up a gorgeous cake in no time.

Sponge cake "Sweet Tooth"

While sponge cakes are easy to make, they can also be frustrating, especially when the base layer is poorly made. To avoid such problems, follow a few golden rules for making a successful sponge cake quickly:

  1. All ingredients for the sponge cake, even the flour, must be cold.
  2. The whites should be separated from the yolks very carefully.
  3. Beat the egg whites in a clean, completely fat-free bowl; this will ensure the rapid preparation of a strong foam.
  4. The flour must be sifted well, at least twice.
  5. You should not mix the dough in a hurry, but carefully, gently, as if lifting each layer of dough from the bottom up.

Having learned a few important secrets, you can prepare a sponge cake.

For the biscuit:

  • selected chicken eggs - 5 pcs.
  • premium flour - 140 g
  • granulated sugar - 170 g
  • vanilla extract

To make fluffy cake layers, place the separated egg whites in a mixer bowl. Beat first on their own, then with sugar until stiff peaks form. Blend the yolks with granulated sugar until they turn milky. Mix the egg whites with the yolks. Add the well-sifted flour to the mixture in small portions. Mix from the bottom up as directed.

Bake in a greased pan at 180 degrees Celsius (350 degrees Fahrenheit) for at least 30 minutes. Do not open the oven during this time to prevent the cake from falling. Cut the quick sponge cake into at least three layers.

For the cream:

  • boiled condensed milk - 1 can
  • sour cream or heavy cream - 200 ml
  • walnuts - 100 g
  • any syrup - 100 ml
  • cream for glaze - 100 ml
  • cocoa powder - 3 tbsp.
  • granulated sugar - 2 tbsp
  • butter - 40 g

To make a quick cream, simply mix condensed milk, cream, and crushed nuts. Spread this cream over the cake layers, previously soaked in syrup.

To make the cake glaze, melt the butter and sugar in a saucepan, add the cocoa powder, and when the mixture comes to a boil, pour in the cream, stirring thoroughly. Drizzle the glaze over the assembled cake. You can decorate it with nuts or sprinkles.

Cake with curd cream mousse

This delicious cake will be appreciated by lovers of healthy cottage cheese and connoisseurs of unusual flavors. It's made using the sponge cake recipe above.

Prepare the cream mousse:

  • heavy cream - 300 ml
  • low-fat cottage cheese - 300 g
  • granulated sugar - 110 g
  • gelatin - 10 g

Dissolve the gelatin in cold water and let it sit for a few minutes. Blend the cottage cheese with half the sugar until creamy. Heat the soaked gelatin until completely dissolved and stir it into the cottage cheese mixture. Whip the cream with the remaining sugar. When the cream thickens, use a whisk to gently fold it into the cottage cheese paste.

Spread the cake layers with a soft frosting. Spread the top layer and sides of the cake with frosting as well. Finish the composition with fresh berries or fruit.

An airy, creamy curd mousse will make the cake especially tender and interesting. Generally, using soft sponge cake layers as a base, even if you're making it quickly, you can experiment with the cake cream as much as you like.

This delicious cake takes about 40 minutes to make and doesn't require many ingredients. This recipe is perfect for quick preparations, as it requires little time.

To do this you will need:

  • eggs - 8 pcs
  • fresh milk - 200 ml
  • sugar - 2 tbsp.
  • flour - 1 tbsp
  • vanilla
  • butter - 300 g
  • shortbread cookies - 300 g
  • bar of chocolate

Crush the shortbread cookies into crumbs and mix with 50 g of butter. Form two layers—these will serve as the base for the cake. Chill in the refrigerator.

Dissolve the gelatin in 140 ml of water, letting it swell first and then heating it over the heat. Whisk the yolks with some of the sugar and pour in the milk, then add the flour. Heat the mixture thoroughly and bring to a boil, stirring constantly.

Add softened butter and vanilla to the cooled mixture and whisk. Form the egg whites into stiff peaks. Fold the egg whites into the remaining mixture.

Place the cookie layer in a deep pan, spread the cream over it, then top with the remaining layer and refrigerate. Drizzle the chocolate over the cake once it's set.

How to make a quick cake icing? To do this, take a 100-gram bar of chocolate, break it into pieces, and place it in a bowl. Add 50 ml of water and microwave for 30 seconds. Then, check the chocolate. If it's soft enough to mix with the water, it's ready. If the chocolate pieces are still hard, microwave for another 10 seconds. Continue this process until the chocolate mixture reaches the desired consistency. Frost the cake with the chocolate.

The delicious and quick "Bird's Milk" cake is a light dessert that takes less than an hour to make. It pairs perfectly with hot drinks, fruit juices, iced tea, and compote.
