To make quick biscuit cookies you will need the most common ingredients:
- 50 grams of butter or margarine
- 150 grams of flour (the classic recipe calls for premium wheat flour, but you can also use corn or buckwheat flour)
- 50 grams of sugar
- 1 teaspoon baking powder
- 1 chicken egg
To make these sponge cookies really quickly, you need to mix the dough correctly. Follow the recipe exactly and make them as shown in the photo.
First, melt half the butter. Even though the amount is small, it's recommended to do this in a bowl over a double boiler to avoid overheating and separating. Add the sugar, remaining butter, and eggs to the melted butter.
This quick recipe has one secret: well-chilled eggs. This will help them whip faster and give the cookies a fluffier texture. If you have time, you can separate the whites from the yolks, fold in the yolks immediately, and then chill the whites well, beat them until stiff, and then fold them into the almost-ready batter. However, this step is optional.
Whisk slowly until the dough is almost smooth. It should be neither too thick nor too runny. While whisking, add the baking powder and flour little by little. Knead the dough thoroughly. To ensure the sponge cookies are deliciously soft and melting, let the dough cool. Refrigerate it for 30-40 minutes.

The shape and appearance of the cookies depend solely on your preferences and available time. You can quickly and easily spoon the dough onto a baking sheet lined with parchment paper. These cookies will have a cozy, homey look.

Place it in a pastry bag with a wide tip and pipe out decorative circles, sticks, and flowers. Another recipe recommends rolling the dough out to a thickness of 4-5 mm.
