It's well known that the vegetarian delicacy with the melodious name "Kulfi" is a relatively recent invention. The recipe originated in the East, in South Asia, where the dessert was primarily made by kulfi wallahs. In other words, the ice cream was so popular that a dedicated team of specialists was created and trained to prepare it.

Rumor has it that Kulfi was first invented to reward and encourage the most devoted believers, who adhered to a rather strict diet. To bring them joy and add some variety to the monastic diet, Kulfi ice cream was invented.

Over time, this vegetarian dessert began to be made in Europe and America, first at home, then in cafes and restaurants. The ice cream acquired its own reputation. In India, for example, it is offered to the gods during ceremonies. A divine dessert for the divine pantheon!

Types of Kulfi

In the East, and now in Europe, Kulfi ice cream is usually prepared according to one of three popular recipes. It can be served:

  • “Kulfi” with condensed milk;
  • “Kulfi” with mango puree;
  • Kulfi with pistachios, almonds, raisins and saffron.

Here's a classic dessert recipe. You can use it as a base for any other ice cream variant by adding the right ingredients.

Preparation

So, here's Kulfi with condensed milk. You'll need:

  • one and a half to two cups of regular milk;
  • half a cup of condensed milk;
  • one-fourth cup of dry milk;
  • half a teaspoon of cardamom (powdered).

Simply stir all the ingredients together, bring the mixture to a boil, and then simmer over low heat for about 10 minutes. Once the liquid has thickened, remove it from the heat and let it cool completely. Now all that's left to do is fill any molds with the ice cream and place them in the freezer. Just before serving, be sure to transfer the ice cream from the freezer to a regular refrigerator. Otherwise, your guests will simply find the kulfi too much to chew.

To make a mango dessert, add another cup of mango puree to the ingredients. If you add saffron, use no more than seven strands. Nuts and raisins are to taste.
