They're lighter than German ones, for example, more elegant than British ones, and more unusual than French ones. It was the Italians who invented cheese-based treats; their cuisine is replete with recipes for sweets with nuts, not like the Eastern ones, soaked in honey and melting on the tongue, but airy ones, with whipped egg whites or soft cream cheese.

Brew strong coffee (preferably in a coffee machine or drip coffee maker, but a cezve will also work). Pour the egg yolks into a bowl and whisk with the sugar, as shown in the photo. Add the cheese and whisk until smooth. Whisk the separated egg whites until foamy and fold into the mixture, stirring with a wooden spoon.

Pour brandy or cognac into the coffee (if using a cezve, pour it into another container to avoid getting the grounds). Prepare a rectangular pan by lining the bottom with parchment paper or cling film. Dip the Savoiardi biscuits in the coffee-cognac mixture and place them in the pan, covering the bottom, as shown in the photo. You can use any dry sponge biscuits, such as ladyfingers, instead of Savoiardi.

Cover the top with the cheese and egg mixture. Continue the dessert with a layer of cookies and cream, smoothing the surface with the edge of a knife. Chill in the refrigerator overnight or for 10-12 hours. Decorate the finished dessert with grated chocolate, as shown in the photo. You can also use cocoa powder: sprinkle it over the first and second layers of cream.

Recipes for this dessert could fill more than one cookbook, but we suggest mastering the preparation of this berry-based Italian dish. You'll need:

  • 3 egg whites
  • 1 tablespoon of instant coffee
  • 600 ml heavy cream
  • ¾ cup sugar
  • 500 g berries of your choice
  • 50 g hazelnuts

This dessert takes a long time to prepare, but it keeps for up to a month. So, you can't go wrong with this berry semifreddo.

Roast the hazelnuts without oil for 6 minutes. Cool and chop finely with a knife. Beat the egg whites with a mixer and add the ground coffee. When the foam becomes white and thick, as shown in the photo, add the sugar and nuts. Beat until the sugar dissolves.

Line a baking sheet with parchment paper. Spread the egg white mixture on it and bake for 3 hours in the oven at 90°C. Wash and dry the berries (wild strawberries, strawberries, raspberries, or currants—your choice). Break the finished meringue into small pieces. Whip the cream with a mixer until fluffy. Add the meringue pieces and mix well.

Take a round springform pan and line the bottom with parchment paper. Spoon 1/3 of the cream and egg white mixture into the pan, then arrange half of the berries on top. Repeat the cream and berry layer, finishing the semifreddo with a creamy layer. Wrap the cake in plastic wrap and press it lightly with a plate. Freeze for 24 hours. The finished dessert can be stored in the freezer for up to a month.
