Trifle – a dessert with a taste of England

Very often, foreign dishes frighten inexperienced cooks with a large number of unknown ingredients. However, there are recipes that anyone can make. A prime example is the English dessert "Trifle" (meaning "trifle" or "little thing").
To make it, simple and inexpensive ingredients are used: sponge cake or cookies for the base, juice or light alcohol (liqueur, wine) for soaking, fruit, meringue, jelly, whipped cream, etc. All of this is layered to create a delicate delicacy.
History of origin
The world-famous dessert "Trifle" was first mentioned in Thomas Dawnson's book "The Good Huswife's Jewell," published in 1596. However, the modern version of the recipe appeared much later – only in 1747 in Hannah Glasse's cookbook "The Art of Cookery."
Recipe for making a classic Trifle
Ingredients needed to create the most delicate sponge cake:
- sugar – 115 g
- flour – 85 g
- hot water – 1 tbsp.
- eggs – 3 pcs.
- baking powder – 1 tsp
You will also need:
- fresh or canned berries/fruits – 450-500 g
- custard – 500-600 ml
- jelly – 500 ml
- 35% cream – 250 ml
- sherry – 75-80 ml
To make a classic Trifle, prepare the sponge cake, let it cool, and cut it into small pieces. Then, generously moisten the cake with sherry or another spirit of your choice. It will take a little while for the alcohol to soak into the sponge cake.
Meanwhile, finely chop the berries and fruits and whip the cream until stiff.
The dessert is assembled in the following sequence:
- pieces of biscuit;
- fruits and berries;
- custard;
- jelly, etc.
After this, repeat the layers, and the total number depends solely on the ingredients you have on hand. All that's left to do is refrigerate the dessert and garnish with cream, nuts, and other sweets before serving.
Strawberry and Cream Trifle
Ingredients:
- sponge cake layers – 180 g
- 35% cream – 1.5 cups
- strawberries – 1.5 cups
- liqueur – 4 tbsp.
- strawberry jam
- powdered sugar
To prepare vanilla cream, take:
- milk – 300 ml
- sugar – 100 g
- corn starch – 2.5 tbsp.
- butter – 20 g
- egg yolk – 4 pcs.
- flour – 1 tbsp.
- vanillin – 1 pc.
- liqueur – 2 tbsp.
First, prepare the cream:
- Pour milk into a saucepan and add a packet of vanilla (or a vanilla pod), bring to a boil over low heat and set aside.
- Add sugar, starch and flour to the egg yolks and mix until you get a homogeneous mass.
- Add the prepared mixture to the slightly cooled milk, stir and bring to a boil again over low heat, whisking and stirring vigorously.
- Place in a cold place for 15 minutes until completely cool.
Now take the prepared sponge cake layers and cut them into cubes, soak them in 2 tablespoons of liqueur, and spread with strawberry jam. Combine the cream with the powdered sugar and beat well.
Place the dessert into molds:
- biscuit;
- strawberry;
- cream and repeat.
After this, cover the dessert with cling film and refrigerate for 2-3 hours. Almond flakes and mint leaves can be used as garnish.
In fact, you can make an English Trifle with any ingredients. For example, many with a sweet tooth love coffee and chocolate desserts. Try and experiment – you might just create something unique!
