Tiramisu

The exquisite dessert "Tiramisu" cannot be complete without cookies.

Not only does it have cake layers soaked in coffee liqueur, but on top of all the layers, to give the delicate dessert a mysterious and fragile crunch, an edible cookie tube serves as decoration.

Making a real tiramisu dessert requires special ingredients, which can be found in Italy. Here, we substitute the ingredients with Russian alternatives:

  • mascarpone - for heavy cream and sour cream
  • a special coffee infusion made with liqueur or cognac with the addition of natural coffee
  • specially baked bread base is replaced with sponge cake layers

If you can't try Tiramisu made with authentic Italian ingredients, a Russian recipe is perfectly suitable for surprising your guests. Some may even prefer this interpretation over the Italian proportions.

"Anthill"

Another popular recipe to keep the hostess tiring and the guests full and happy is a large and sweet "Anthill." You can make the dough for this dish yourself, but if you're really pressed for time, feel free to use:

  • cookies, whatever is at hand
  • condensed milk (boiled or 2 types)
  • a pack of butter

Place the cookies in a large, deep bowl and crush them with a masher. Add the condensed milk to the very softened butter and beat until smooth. It should have the consistency of thick, yet pourable sour cream. Pour the mixture into the bowl with the cookies and mix thoroughly. Refrigerate the cake until completely set.

With cookies and fruits

Fruit pairs well with cookies. Take this quick banana and cookie dessert, for example:

  • 3 ripe bananas
  • unsalted cracker cookies
  • sour cream
  • sugar
  • condensed milk
  • nuts (to taste)

The base of the future pyramid is, of course, a creamy cracker. Fill it with very thick sour cream with sugar or another cream of your choice. Arrange sliced banana rings in even rows on top of the cream, pour a layer of condensed milk on top, and sprinkle with grated nuts. Repeat the layers as long as you have food on the table.

The cake sits for 2-3 hours, the crackers soaking in the delicious fruit-sour cream sauce and turning into a smooth, slicable mass. You can do the same with other fruits.

Cheese envelopes

You can make any kind of filled pastry from crushed cookies. The hardness of the raw dough will trap the juices released by the berries and fruits during cooking. The dough will be firm but crispy, and the inside of the dessert will be soaked in its own juices. This can be used to make cheese or curd wraps. This makes a delicious breakfast and is healthy.

For the test:

  • 2 eggs
  • 1 glass of milk
  • 1 teaspoon of salt
  • 2 tablespoons of sugar
  • Baking soda and vinegar
  • Flour

Before adding flour to the egg, milk, and seasoning mixture, be sure to add a teaspoon of baking soda. Add the crushed cookies to the dough until it's soft (like for pancakes). Roll out the dough on the counter and cut it into squares.

Filling:

  • grated cream cheese
  • cheese mass
  • cottage cheese or curd (possibly with raisins)

Mix the mixture and spread 1 tablespoon onto each square. You can fold the squares into corners or seal them into real envelopes.

The dish is baked in the oven for 15-20 minutes until the heady aroma of hot cookies appears.
