The elegant name of this dessert perfectly matches its taste. Cookies called "Kisses with cottage cheese" are perfect for both a romantic dinner and a regular family tea party. The cottage cheese included in this treat makes it tender, almost airy. Combined with its ease of preparation, these cottage cheese cookies and their recipe are worth a closer look.

Classic version

If you decide to make a curd treat for your loved ones, stock up on the ingredients required for the recipe:

  • 0.25 kg flour;
  • a pack of margarine;
  • 0.25 kg cottage cheese;
  • sugar (1 cup);
  • soda (0.5 teaspoon).

Recipe:

  1. To make soft and tender "Kisses", you should first soften the margarine.
  2. Rub the margarine with the cottage cheese until the mixture is lump-free.
  3. Add flour and baking soda and mix thoroughly. Caution! Do not add sugar to the cottage cheese cookies!

Now form the "kisses." Pinch off small walnut-sized pieces of dough from the dough and roll them into balls. Then roll them into small circles, like for vareniki. Dip one side of the circle in sugar and fold it in half, so the sugar is on the inside. This should create a semicircle. Then dip one side of the semicircle in sugar again and fold it in half. This will form a triangle, as in the photo. Dip one side of the "kisses" in sugar and place them, clean side down, on a baking sheet preheated to 200 degrees Celsius. Bake for 20-30 minutes.

To make cottage cheese cookies, you can use another recipe. It differs from the previous one in that it includes eggs. You'll need the following ingredients:

  • half a kilogram of cottage cheese;
  • two eggs;
  • sugar (1 cup);
  • a pack of margarine;
  • a little soda;
  • three glasses of flour.

Recipe:

  1. To make curd cookies, we begin by thoroughly mixing the eggs and curd cheese until a homogeneous mixture is obtained.
  2. Then add flour, softened margarine (not melted!), soda and sugar.
  3. Knead the dough until stiff and cut into pieces. You can do this using the same method used for making vareniki.
  4. Roll out each piece to form a circle.
  5. As the previous recipe shows, dip the circles in sugar and fold them in half. Then dip them again and form a triangle.
  6. Grease a baking sheet with vegetable oil and place the “kisses” on it, sprinkling them with sugar on one side.
  7. Bake for half an hour in an oven preheated to 200 degrees until the curd cookies turn pink, as in the photo.

The nuances of a masterpiece

The first and second recipes are the basic ones for this dessert. However, when making cottage cheese cookies, you can adjust some proportions as desired. For example, you can use one egg instead of two, or just the egg white instead of a full egg, etc. Also, cottage cheese or stale baby cheese works perfectly in place of regular store-bought cottage cheese. This won't significantly alter the flavor of these "kisses."

The shaping recipe is also up to each individual. Some find it easier to first form balls or pieces and then roll them out to form circles. Others roll the dough out thickly and then use a glass to cut out circles. This method results in smooth edges and uniform shapes. The only thing to keep in mind is that the dough is quite difficult to roll out and can tear.

While the dough recipe remains the same, you can shape the curd cookies differently. To do this, refrigerate the dough for half an hour, then roll it out thinly. Brush with egg white and roll into a log. Then cut the dough into rose-shaped pieces. Bake with whipped egg white. The curd cookies remain essentially the same, but the shape becomes more interesting.

The color of the finished product can be varied by adjusting the baking time. If you don't like a light crust, baking the molds for 20 minutes is sufficient. Spices and additives can add variety to the flavor. You can vary the recipe by mixing the dipping sugar with cinnamon or nuts. Walnuts or ground hazelnuts can be added to the dough for a richer flavor.

Sugar-free cottage cheese dough also makes an easy appetizer for the main meal. To do this, omit the sugar from the recipe and don't dip the cookies in it. Instead, layer the remaining cottage cheese with herbs or season the dough with salt. This way, the cookies can serve as a delicious appetizer or a dessert with tea, depending on the host's preference.

Why "kisses"?

The treat can be shaped in any way. The most common one, "kisses," gets its name from the cookie's shape, which resembles lips pursed in a kiss. If you're planning a romantic date, this dessert theme is perfect. It's best served hot with coffee or tea.
