Chocolate rice cookies

These chocolate chip cookies made from rice flour, dried fruit, and seeds are a great snack option when you can't get a proper meal. These cookies are very nutritious, sweet, and delicious. They can be served with any drink (tea or coffee) or simply as a treat for the kids—they'll be delighted. The chocolate color and flavor are achieved with cocoa powder.
What's more, making cookies using this recipe is incredibly simple. Rest assured, you'll be able to handle them without any hassle. The dough preparation and baking process will take about an hour.
Ingredients
- premium rice flour – 5-6 tablespoons
- cocoa powder – 1 tbsp
- butter 72% – 50-60 grams
- chicken egg – 1 pc.
- raisins – 30 grams
- dried apricots – 30 grams
- peeled roasted sunflower seeds – 20 grams
- sugar - 1/2 cup
Recipe
The butter should be soft by the time you're ready to knead it. Place the butter in a bowl and cut it into pieces with a knife.
Add the sugar and let it sit until the butter has softened. After about 15 minutes, you can begin to cream it with a fork and sugar.
Add the egg to the bowl with the butter mixture and beat until it's thoroughly combined. The mixture should be more or less smooth.
Add a few spoons of rice flour.
Add cocoa powder.
Stir the dough. Dice the dried apricots and, if necessary, soak the raisins in hot water for 3-4 minutes. Add them to the bowl with the dough.
Add peeled seeds.
Add the remaining flour and knead the dough.
To make the dough easier to work with, put it in the refrigerator for 10 minutes, covered with cling film.
Roll out the dough and use cookie cutters to create any shape you like. Place them on a greased baking sheet or pan.
Place in the oven and bake at 170 degrees for about 25-30 minutes.
