They were often filled with condensed milk, but in reality, the fillings could be anything. Cream for wafer rolls can be custard, protein, chocolate, or curd. Custard filling
The recipe for making custard consists of: 1 yolk, 100 g of margarine or butter, 1 cup of sugar, 1 cup of milk.
Pour milk into a saucepan and break an egg into it. Mix well. Then add sugar, place on the stove, and bring to a simmer over low heat. Stir constantly. After about 5 minutes, you'll have something resembling condensed milk. Then, pour this condensed milk into a bowl, cover, and set aside to cool. Using a mixer, beat the butter. Then, gradually add the cooled creamy syrup. Beat until fluffy. The custard filling is ready! You can fill the waffles with the cream.
Curd filling
Curd cream is rich and dense. You can make it less sweet if you prefer. It's not the most popular recipe, but it's delicious! Definitely try it as a waffle filling.
We will need: 100g butter, 100g low-fat cottage cheese, 50g powdered sugar, 15g condensed milk, a couple of drops of cognac.
Using a mixer, beat the butter with the powdered sugar until the butter turns white. At this point, add the condensed milk and beat thoroughly again. Finally, add a couple of drops of cognac. Separately, strain the cottage cheese through a sieve, then gradually fold it into the mixture and beat again. The delicious curd cream is ready! You can fill the waffles with it.
Ganache tubes
If your family loves chocolate, be sure to delight them with the chocolate flavor of wafer rolls. To achieve this flavor, you'll need to make a ganache.
To prepare it you will need: 200 g of dark chocolate, 150 ml of heavy cream (preferably 30%).
Pour the cream into a saucepan, place it on the heat, and bring to a boil. As soon as it begins to boil, immediately add the chocolate pieces. Continue to simmer over low heat, stirring constantly, until the chocolate is completely melted. Once everything has reached a smooth consistency, turn off the heat and let the ganache cool on the counter, then refrigerate it for an hour.
After this time, remove the ganache from the refrigerator and beat it with a mixer for a couple of minutes until the chocolate mixture lightens slightly. The incredible chocolate filling for the tubes is ready! Transfer it to a pastry bag and fill the wafers with the cream.
Protein filling
And finally, a recipe for the fluffiest filling for wafer rolls: protein cream cooked in a water bath.
For this cream, you'll need two egg whites and 120g of granulated sugar. It's important to take the eggs out of the refrigerator an hour before making them. They shouldn't be cold.
Separate the egg whites from the yolks. Pour the whites into a deep bowl, add sugar, and beat with a mixer for about a minute. Then place the bowl with the future cream in a double boiler, making sure the boiling water doesn't touch the bottom of the bowl where the cream is. Then whisk the whites directly in the double boiler for about 5-6 minutes, until the sugar is completely dissolved. Remove the bowl from the heat and beat for another minute. The egg white filling is ready!
