Classic

Custard for eclairs 2

This is the simplest recipe, and it'll help you effortlessly create a delicious filling that will make your eclairs simply amazing. To make it, prepare:

  • Half a liter of milk;
  • 4 egg yolks;
  • 50 g flour;
  • 200 g sugar;
  • 1 g vanillin.

So, pour the milk into a saucepan and place it on the stove. Reduce the heat to low and bring it to a simmer. Turn off the burner and let it cool. Place the yolks in a bowl and stir. Then add the flour, sugar, and vanilla. Beat everything well, preferably with a mixer.

Next, stirring the yolks, now using a whisk, slowly pour in the warm milk. Then return the mixture to the heat and bring to a boil. That's it. To thicken the cream, the recipe calls for simmering it for another 5-10 minutes, depending on your desired consistency.

Caramel

Custard for eclairs 3

It has a rich, caramel flavor and wonderful texture, as well as a pleasing color. This filling will undoubtedly make your cakes incredibly delicious. To prepare, you will need:

  • 200 g boiled condensed milk;
  • 200 g cream with a fat content of at least 33%;
  • butter 100 g;
  • 3 tablespoons flour;
  • 1 g vanillin;
  • 200 ml milk;
  • 1 tablespoon of sugar.

Pour the milk into a saucepan, add the sugar and flour, and whisk vigorously to avoid lumps. Place the saucepan on the stove, reduce the heat to very low (this is important to prevent burning), and cook until the mixture thickens. Once the cream is removed from the heat, add the condensed milk and whisk again until smooth. Let it cool.

Meanwhile, take the cream and softened butter (remove it from the refrigerator first). Place them in a bowl and beat thoroughly. Of course, a mixer is the easiest and most effective way to do this. Then add the slightly cooled cream to the whipped mixture. Add it gradually, in several batches, remembering to mix thoroughly. After this, the caramel filling is ready to use.

Chocolate Delight

Custard for eclairs 4

This recipe will be a real find for chocolate lovers. It has the distinct flavor of this beloved sweet, and a very appetizing color, as pictured. To make it, prepare the following:

  • 150 g sugar;
  • 2 egg yolks;
  • 100 g butter;
  • 50 g dark chocolate;
  • 250 ml milk;
  • 1 tablespoon flour;
  • 3 tablespoons cocoa;
  • 1 tablespoon of potato starch.

As with the previous preparations, we start with milk, pouring it into a saucepan. We also crumble the chocolate into it, breaking it into small pieces. Turn on the heat and wait for the milk to boil and the chocolate to melt. Stir constantly, of course. Then turn off the heat. If the milk doesn't boil before the chocolate melts, that's okay—this isn't a requirement.

Meanwhile, beat the egg yolks and sugar. It's important to note that the yolks should be chilled. It's best to use a mixer to whip the mixture until it forms a nice foam. Then, add the starch and flour to the whipped mixture, then whisk thoroughly. Next, pour in the chocolate-colored milk. Pour it in a thin stream, stirring constantly.

Next, place the mixture back on the stove. Reduce the heat to very low and simmer until it reaches your desired consistency. Now we have one last step: beat the butter, which should be soft (remove it from the refrigerator first), and then slowly fold it into the cooled cream. If done correctly, you'll have a filling as delicious as the one in the photo.

As you can see, making eclairs with custard cream, like the ones in the photo, is very simple and quite quick if you know a good recipe. And now you know three wonderful ways to prepare this delicious treat for your favorite homemade pastry – eclairs.
