The "Basket" cake is one of the few desserts that looks truly tempting (even in the photo). Surely everyone remembers the taste of the most delicate meringue cream, the crunch of shortcrust pastry, and the sweetness of marmalade or candied fruit. In fact, you can make this classic recipe by adding various fillings: cream, jelly, fruit, etc. This assortment will look stunning on the holiday table.
As for the dough, you decide whether you want it puff pastry or shortcrust pastry. The key is to roll it out as thinly as possible. The "Basket" pastry can be baked either completely or partially, depending on the filling.
Classic "Basket"

Ingredients for the dough:
- Butter – 100 g
- Egg (yolk) – 1 pc.
- Flour – 165 g
- Powdered sugar – 65 g
- Baking powder – 0.5 tsp.
- Salt
Ingredients for protein cream:
- Egg (white) – 2 pcs.
- Sugar – 130 g
- Lemon juice
- Vanilla sugar
- Water – 50 ml
Ingredients for butter cream:
- Powdered sugar – 40 g
- Butter – 75 g
- Condensed milk – 30 g
- Cocoa – 8 g
The recipe suggests using any sour jam or preserves (180 g) for the filling, and candied fruit or marmalade for decoration. Then you'll get a cake just like the one in the photo.
Let's start cooking:
- Mix all the ingredients for the dough (except flour) and achieve a homogeneous mass.
- Add flour and mix thoroughly.
- We roll small pieces of dough into a ball and roll it out into a layer 5-7 mm thick, placing it tightly into the molds.
- Now the molds need to be placed in the refrigerator to cool (30 minutes).
- The base for the “Basket” cake is baked at 200 degrees for 12-15 minutes.
- To make the meringue cream, combine sugar and water and bring to a boil. Cook for 5 minutes. Meanwhile, beat the egg whites with vanilla sugar until foamy. Add lemon juice and beat thoroughly again.
- The resulting mass must be transferred to a pastry cornet.
- When the tartlets have cooled, spread the jam into them, add the meringue cream and candied fruit.
- This recipe also suggests decorating the "Basket" cake with ribbons of buttercream (butter, powdered sugar, cocoa and vanilla sugar are whipped, after which condensed milk is gradually poured into them).
Fruit basket
You've probably seen photos of brightly colored tartlets filled with fruit. Today, we're making a shortcrust pastry "Basket" with just such a filling.
Ingredients:
- Dough – 500 g
- Peach – 1 pc.
- Banana – 2 pcs.
- Lemon jam – 4 tbsp.
- Cream – 4 tbsp.
- Coconut flakes, flower honey and lemon juice - 1 tbsp each.
- A little vanilla
Recipe step by step:
- Roll out the dough thoroughly and place it into the molds, piercing them several times with a fork. Then refrigerate for 15 minutes.
- When the dough has cooled, bake the baskets for 15 minutes.
- Spread the prepared base with lemon jam.
- Grind the coconut flakes into powder.
- Mash the bananas into a puree, add coconut powder, lemon juice and honey.
- Whip the cream, adding vanilla seeds. Now fold the resulting mixture into the banana cream.
- Peel the peach and cut into slices.
- Place the banana cream into the tartlets and decorate with peach slices.
This recipe will take you no more than 30 minutes, but will still give you an incredible treat.
Orange Curd Tartlets
An unusual shortcrust pastry treat, reminiscent of the "Basket" cake in appearance, but with a distinctive flavor. We offer you the recipe with photos today.
Ingredients for the dough:
- Flour – 150 g
- Egg - 1 pc.
- Sugar - 4 tbsp.
- Butter – 50 g
- Dark chocolate – 50 g
Ingredients for the cream:
- Butter – 50 g
- Egg – 1 pc.
- Sugar – 3 tbsp.
- Orange – 1 pc.
- Starch – 1 tsp.
Recipe:
- Remove the zest from the orange, peel and cut into small pieces.
- Prepare a double boiler and place the pan with the orange and zest in it.
- When the water boils, boil the mixture (10 minutes).
- Add sugar and cook for a little longer (10 minutes).
- Add butter and egg, stir, wait another 5 minutes.
- Dissolve starch in water or juice (1 tbsp) and gradually pour into the cream, cook for another 5 minutes.
- After this, the finished mixture needs to be cooled. The color should be as shown in the photo.
- Now melt the chocolate for the dough in a double boiler.
- Grind sugar with egg and add chocolate and butter, mix.
- Add flour and knead the dough thoroughly.
- Place the dough into tartlet moulds and bake for 15 minutes at 200 degrees.
