Several recipes for almond cakes

Light almond cakes are a healthy and delicious dessert. They're quick and easy to make, using fairly simple ingredients. The key is finding a good recipe. That's exactly what we'll be sharing today.
Almonds are often mistakenly called nuts, but this isn't entirely accurate. Almonds are actually seeds, like apricot kernels. However, they contain a wealth of beneficial vitamins and nutrients. For example, almond kernels contain a lot of protein, fatty acids, calcium, vitamin E, and even essential oils. These aromatic seeds promote better sleep and digestion, and, thanks to their abundance of phosphorus, have a beneficial effect on brain function.
Almond cakes - flatbreads
This recipe is considered the simplest of all the options. And the absence of butter, yolks (which contain harmful cholesterol), and wheat flour make these almond cakes practically diet-friendly.
We will need:
- almonds - 200 g
- chicken egg whites - 2 pcs
- powdered sugar - 160 g
Since our recipe doesn't call for regular wheat flour, we need to make our own, healthier almond flour. To do this, toast the almond kernels in a pan and grind them in a coffee grinder until they become flour.
Mix the egg whites with the powdered sugar and beat with a mixer until stiff peaks form. Stir in the freshly ground flour with a spatula. The mixture should form a buttery paste. Refrigerate the finished dough for half an hour.
Using a pastry bag or spoon, pipe small cakes onto a parchment-lined baking sheet. Preheat the oven to 170 degrees Celsius (350 degrees Fahrenheit) and bake until golden brown. This usually takes 10-15 minutes.
Almond cakes go well with milk, yogurt, and tea.
Tyrolean cakes
Tyrolean almond cakes are a perfect dessert recipe for a special tea party or dinner party. You'll agree, the name alone is intriguing and inviting.
So, let's get it out of the fridge:
- egg whites - 2 pcs
- almond flour - 150 g
- raisins - 75 g
- dark chocolate - 75 g
- sugar (sand) - 80 g
- vanilla
- salt to taste
- lemon zest - 1 tsp
- rum or other strong alcoholic drink - 1 tbsp
- cinnamon - 1 tsp
- flour - 100 g (wheat)
- lemon juice - 2 tbsp
- coconut flakes
First, prepare the almond flour. See the recipe above. Then beat the egg whites with salt until white. Then add the sugar and continue beating until stiff peaks form.
Grate the chocolate and stir it into the egg whites. Add the cinnamon, vanilla, lemon zest, lemon juice, remaining sugar, raisins, and almond flour. Whisk the mixture gently, so the foam doesn't settle, and then pour in the rum.
Using a teaspoon, drop 5-6 cm balls of dough onto a parchment-lined baking sheet. Bake in a hot oven for 15 minutes.
Glaze recipe:
- cocoa - 2 tbsp
- oil drain - 3 tbsp
- condensed milk - 3 tbsp
Melt the butter in a saucepan, add the cocoa powder, and pour in the condensed milk. Stir the mixture and bring to a boil, but do not overcook it. If the glaze is too thick, you can add a spoonful of milk or pure water.
Dip one side of the finished cakes into the glaze, place them on a plate, and sprinkle with coconut flakes. Once the glaze has set, the dessert is ready to serve!
You can also make a lemon glaze for these cakes. It also pairs beautifully with the almond flavor and adds its own unique aroma.
To do this you will need:
- butter - 50 g
- powdered sugar - 1.5 cups
- lemon juice - 2 tbsp
Soften the butter and whisk with the powdered sugar. Finally, add the lemon juice. Dip the almond cakes in this glaze and refrigerate them.
No-bake almond cake
This is probably the easiest recipe as it requires no baking.
- shortbread cookies - 400 g
- condensed milk - 250 ml
- butter - 100 g
- cocoa - 4 tsp
- almonds - 200 g
Crush the cookies and place them in a bowl. Blend the almonds and add them to the cookies. Pour in the condensed milk, add the butter, and cocoa. Mix everything together and form into balls. Refrigerate until set. You can dip them in any glaze you like.
