The basic custard recipe contains only three main ingredients: eggs, milk, and sugar. Many pastry chefs add various flavorings, traditionally garnishing the treat with vanilla pods.
Recipe for making delicate eclairs

- one glass of water;
- butter – 150 g;
- one glass of flour;
- four eggs;
- salt;
For the cream:
- four eggs;
- flour – 4 tablespoons;
- four glasses of milk;
- butter – 200 g;
- two glasses of sugar.
Recipe
- Bring a cup of lightly salted water to a boil, then add 150 g of butter and bring to a boil again. Gradually pour one cup of flour into the same pan, stirring constantly, and turn off the heat.
- Using a mixer, beat four eggs one at a time. Then gradually add the eggs to the batter, mixing thoroughly. The batter should be thick enough not to run off the spoon.
- Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Grease a baking sheet with butter. Using a pastry bag, shape small eclairs onto the baking sheet. Bake at 200 degrees Celsius (400 degrees Fahrenheit) for 25 minutes, then reduce the oven temperature to 170-180 degrees Celsius (350-375 degrees Fahrenheit) and bake for about ten more minutes.
- To prepare the filling, combine the sugar, eggs, and flour. Gradually pour the pre-boiled milk into the egg mixture, stirring constantly. While heating, stir continuously until the mixture thickens.
- Let the egg-milk mixture cool for a while, then combine it with the softened butter. Beat the resulting mixture until smooth.
- Fill the prepared pastries with the resulting custard. Use a pastry bag with a special tip for this purpose.
- To decorate, sprinkle the finished treat with powdered sugar or drizzle with melted chocolate.
