Strawberries and cream... How many times have we seen a young couple seductively devouring this delicacy in the movies? The image involuntarily comes to mind—a cloud of cream and juicy, red strawberries. It's undoubtedly a wonderful combination, and truly delicious! But the variety of strawberry desserts isn't limited to this combination. We offer you several ideas on what a strawberry cake could be like.

Delicate strawberry cake

Recipe one and ingredients for the dough:

  • Eggs – 4 pcs.
  • Sugar – 180g.
  • Flour - 180 gr.
  • Vanillin – 1 teaspoon.

Ingredients for cream mousse:

  • Strawberries – 300 g (clean, not spoiled).
  • Powdered sugar 150-200g (depending on the sweetness of the strawberries).
  • Heavy cream - 300 g (30% and above).
  • Gelatin – 1 tablespoon.

Strawberry Shortcake Recipe

Ingredients for the top layer:

  • Strawberries – 150 gr.
  • Powdered sugar – 50 gr.
  • Gelatin – 1 tablespoon.

Recipe for making the dough:

  1. Preheat the oven to 180 degrees Celsius. Grease a baking sheet with medium sides.
  2. Separate the egg whites from the yolks, making sure not to let any yolk get into the whites. Refrigerate the bowl with the whites.
  3. Meanwhile, in another bowl, beat the yolks with sugar until white and set them aside.
  4. Take the whites and beat them into a medium-thick foam, then gradually add the yolks, continuing to beat.
  5. Next, add vanilla and sifted flour to the mixture and mix thoroughly. The batter should have a consistency similar to pancake batter.
  6. Pour the batter onto a baking sheet. It should be about 7 mm thick. Place the baking sheet in the oven for 15-20 minutes. Five minutes before the end of the baking time, check the batter's readiness with a toothpick or matchstick.
  7. Once the cake is ready, remove the baking sheet. Cut out the bottom and top layers of our cakes from the cake. These can be circles, squares, or diamonds, approximately 5 x 5 cm in size, or larger if desired. Cut out as many as the cake will take (but ultimately, there should be an even number) and cover with a towel. Place the remaining scraps in a bowl and set aside to dry.

Strawberry Shortcake

Recipe for the top layer jelly:

  1. Dissolve the gelatin in two tablespoons of warm boiled water and leave to swell for 5-7 minutes.
  2. We clean the strawberries, wash them and grind them together with powdered sugar in a blender.
  3. Transfer the strawberry mixture to a heavy-bottomed saucepan. Pour in the gelatin and place the saucepan over low heat. Stir to ensure the gelatin is completely dissolved. Cook for no more than four to five minutes.
  4. Turn off the heat and place the saucepan in a cool place to cool.

Recipe for cream mousse:

  1. Dissolve the gelatin in two tablespoons of warm boiled water and leave to swell for 5-7 minutes.
  2. Beat the washed strawberries, cleared of green stems, together with half of the powdered sugar in a blender.
  3. Pour one-quarter of the cream into a small saucepan and set it over low heat to warm. Pour in the gelatin and heat until the mixture is completely dissolved. Turn off the heat and let cool slightly.
  4. Whip the remaining cream and powdered sugar until stiff peaks form. Gradually pour in the cooled cream and gelatin and mix thoroughly. Then add the strawberry puree and mix thoroughly again.

Dessert decoration:

  1. Grind the dried biscuit crumbs in a blender.
  2. Place the sponge cakes on the pan, not too close to each other. Carefully spoon some mousse onto each cake, then cover with a second sponge cake and refrigerate for 10 minutes to allow the mousse to set slightly.
  3. After 10 minutes, remove the cakes. Using a knife or spatula, carefully trim off any protruding mousse to create a nice shape on the sides.
  4. Spoon a little jelly over each cake, then coat the sides of each cake with it. Then sprinkle the sides with biscuit crumbs and refrigerate for another 10-15 minutes.

If desired, the finished strawberry cake can be garnished with whipped cream, fresh strawberry halves, and mint leaves. You can also press a whole strawberry into each cake when layering the mousse, giving your cakes a "surprise" twist.

Although this recipe looks complicated, it's actually very easy to make. If you don't want to bother cutting out cake pans, you can easily modify this recipe into a cake by using two large sponge bases instead of many small ones.

Strawberry tiramisu

Ingredients:

  • Strawberries – 300 g (sweet and not spoiled)
  • Cottage cheese - 300 gr.
  • Whipping cream – 200 g (from 30% and above).
  • Savoiardi cookies – 200 gr.
  • Powdered sugar – 150 gr.
  • Cocoa - 20 g (unsweetened, for sprinkling).

Recipe for making dessert:

  1. Beat the cream cheese with 50 g of powdered sugar.
  2. Whip the cream with 50g of powdered sugar until stiff peaks form, then gradually add the cream cheese, continuing to whisk.
  3. Blend the strawberries in a blender with the remaining powdered sugar until smooth. Spread the mixture on all the cookies.
  4. In a pre-prepared tiramisu pan, layer the cookies and cream cheese frosting, finishing with the cream. Arrange the cookies in a checkerboard pattern for a beautiful cut.
  5. Place the tiramisu in the freezer for 30-40 minutes.
  6. We take the dessert out of the freezer, sprinkle the tiramisu with cocoa powder through a sieve and decorate with strawberries.
