A recipe for a traditional cake, or how to make "Leningradskoe"
Leningradskoe pie is one of the most popular desserts among connoisseurs of delicacies. There are various ways to prepare it. Every homemaker can try their own recipe, and in any case, the result will be a wonderful, delicious treat that you'll want to make every day. The recipe is quite simple, and the entire preparation process takes about an hour and a half.
Getting ready to cook
So, to prepare the Leningradskoye cake, we will need the following ingredients:
- puff pastry - 500 g;
- water - 150 ml;
- 250 g butter;
- 4.5 tablespoons of sugar;
- flour - 60 g;
- eggs - 4 pcs.;
- 5 tablespoons of milk;
- 1 pack of vanilla sugar;
- a little powdered sugar for decoration.
First, preheat the oven to 200 degrees Celsius. While the oven is preheating, prepare the dough. Add 1/5 of the butter and 1 teaspoon of sugar to the water, stir, and bring to a boil. Then turn off the heat and add all the flour. Mix everything together to form a ball. Cool the dough to room temperature, then add 2 eggs, one at a time, stirring each time. The dough should be shiny.
Now we need to roll out the puff pastry and cut it into 12 x 12 cm squares. Place a small amount of choux pastry in the center of each square and fold the corners of the squares toward the center. Place parchment paper on a baking sheet, transfer the cakes, and bake in the oven for 30 minutes. It's important not to overcook them. We want them to be a beautiful light golden color.
While the cakes are baking, let's make the Charlotte cream. Pour the milk into a saucepan and heat it on the stove. Mix the remaining two eggs with the vanilla and regular sugar. Pour the egg mixture into the boiling milk, then whisk thoroughly until the cream forms. Heat to 45 degrees Celsius (113 degrees Fahrenheit). Remove from the stove.
Now we need to beat the butter with a mixer. Gradually add the egg mixture, continuing to beat slowly, until fluffy. Our "Leningradskoe" delicacy is almost ready; all that's left is to cool the cake and fill it with cream. For this, we'll need a pastry bag. Decorate everything with powdered sugar.
