This delicious, thin and crispy nut cake is perfect for morning tea. Walnuts are considered one of the most beneficial foods in the human diet. For many years, they have been known in many countries as an effective remedy.

To prepare it you will need:

  • 1 yolk;
  • 100 grams of butter;
  • 200 grams of flour;
  • 70 grams of powdered sugar;
  • 2 proteins;
  • 90 grams of nuts (you can mix walnuts and almonds in a 50:50 ratio);
  • 1 cup of sugar.

First, cream the butter with the powdered sugar and egg yolk. Once the mixture is completely smooth, add 100 grams of flour and knead into a soft, shortcrust pastry.

It's rolled into a ball and rolled out evenly on greased baking paper. The final result should resemble a smooth rectangle, with a roughly uniform thickness throughout. The finished base is refrigerated for one hour.

After the dessert base has cooled, preheat the oven to 200 degrees Celsius and bake the crust for twelve minutes. Meanwhile, toast the nuts in a dry frying pan for about the same amount of time.

This will enhance the nutty flavor of the dessert and make them easier to grind. It's best to grind them in a blender, but a coffee grinder will also work. The grind should be as fine as possible.

After this, beat the egg whites thoroughly. The result should resemble a stiff foam. Mix the nut powder with sugar, then carefully fold the egg whites into the mixture. Add another 100 grams of flour.

The thoroughly mixed filling is spread evenly over the baked crust, after which the dessert is baked in the oven (at 160 degrees Celsius) for twenty-five minutes. The dish should be cut into portions while still hot, otherwise it will crumble.

Ingredients:

  • 200 grams of softened butter;
  • 150 grams of sugar;
  • 1 teaspoon vanilla sugar;
  • 7 egg whites;
  • 150 grams of walnuts;
  • 150 grams of almonds;
  • 2 tablespoons of wheat flour;
  • 0.33 tablespoons of black coffee;
  • 150 grams of dark chocolate.

First, dry and finely chop the nuts. Dry them in the oven, which will take about 10 minutes. Mix and grind the chopped nut mixture with half a cup of sugar. Add flour.

Whip the egg whites with the remaining sugar. The result should resemble the thick foam on a good latte. Carefully fold the egg white foam into the nut mixture, mixing thoroughly from top to bottom.

Preheat the oven to 180 degrees Celsius. Line a baking pan with parchment paper and grease it. Spread the dough evenly over it. Bake the cake for twenty-five minutes.

Now it's time for the cream. Soften the butter and whisk thoroughly. Meanwhile, melt the dark chocolate in a double boiler. Strain the coffee. After these preparatory steps, whisk the ingredients until smooth.

The cooled cake is decorated with the prepared cream, then cut into portions and refrigerated. The dish is ready to serve!
