Mix one part of the sugar with the sour cream and beat well with a mixer. Beat the second part of the sugar with the eggs. You should get a fairly fluffy mixture. Mix the third and final part of the sugar with the vanilla, baking soda, and cocoa.

Next, combine the contents of the three bowls. You'll get a liquid, homogeneous mass. Add the flour, sifting it beforehand or directly as you add it. Ideally, the dough should have the consistency of sour cream.

Another incredibly delicious frosting that's perfect for our cake is chocolate-sour cream. For it, you'll need:

  • sour cream – 100 g;
  • dark chocolate - bar;
  • butter – 50 g;
  • vanilla sugar – 1 tsp;
  • salt - on the tip of a teaspoon;
  • powdered sugar – 2 tbsp.

Break the chocolate into small pieces and place it in a heatproof bowl. Add the butter and melt everything, stirring constantly. When the mixture has cooled completely, add the vanilla, salt, and sour cream. Mix thoroughly. Then gradually add the powdered sugar. Adjust the amount based on the consistency: it shouldn't be too runny, like cream. Then beat everything with a mixer until fluffy.

Cut the cooled sponge cake into two parts, spread one with cream, and place the second on top.

How to make glaze?

  • milk – 3 tbsp;
  • cocoa – 3 tbsp;
  • powdered sugar – 6 tbsp;
  • butter – 1 tbsp.

Place the butter, milk, and powdered sugar in a heatproof bowl. Place over high heat and, stirring, bring the mixture to a boil. Once it boils, add the cocoa. Turn off the heat almost immediately. Don't worry about the glaze being too runny or about using a bad recipe. Once you apply it to the cake, it will thicken after a while. Immediately after applying, cut the cake into portions.
