  2. For the custard: corn starch (30 g), milk (300 ml), eggs (1 pc), granulated sugar (100 g), lemon zest (30 g).
  3. For the butter cream: 33% fat cream (250 ml), gelatin (10 g), granulated sugar (50 g).
  4. For the layer: blackberry jam (100 g).
  5. For decoration: marzipan (300 g), granulated sugar (50 g), butter (70 g), black, red and green food coloring (by eye).

  1. For the sponge cake, beat the eggs with sugar, add flour, baking powder, and starch. Mix everything together and bake at 175 degrees Celsius until done.
  2. For the custard, combine the milk and sugar and bring to a boil. Separately, beat the eggs with the cornstarch. Gradually whisk in the slightly cooled milk and add the lemon zest. Reduce heat to low and simmer until the desired consistency, stirring constantly.
  3. For the buttercream, soak the gelatin in cold water. Meanwhile, whip the cream with sugar. Melt the gelatin over low heat, but do not let it boil, and carefully fold it into the cream.
  4. Assemble the cake. Cut the sponge cake into three pieces crosswise. Spread the bottom layer with jam, then layer with custard. Place the second layer and spread it with buttercream.
  5. To decorate, beat the butter and sugar together and spread a thin layer over the entire third cake layer. Set aside a small amount of marzipan to make flowers. Then, mix the remaining marzipan with black food coloring and roll it into a circle of the appropriate diameter, 2 mm thick. Cover the cake with this circle and decorate with flowers and petals.
