Soufflé is a very delicate pastry, one might even say airy. Soufflé recipes vary both in preparation technique and ingredients. One of the most delicious is chocolate soufflé. It combines all the delicacy of this baked good, and the pronounced chocolate flavor is simply magnificent.

Soufflés are prepared for various purposes: they can be served as a standalone dessert or used in a cake. In this article, we'll share soufflé recipes for both. Let's start with how to make this chocolate delight. The recipe is very simple.

When the topic of soufflés comes up among women, many prefer to change the subject, believing that this baked good isn't their strong suit. This is because soufflés are fickle things, and the slightest mistake during preparation can cause them to fail to rise in the oven or even collapse.

The recipe we'll share with you, if followed correctly, will prevent the small cake from falling over. And the end result will be a light, chocolatey delight. To make it, stock up on the following:

  • 140 grams of good dark chocolate;
  • 2 egg yolks;
  • 4 egg whites;
  • 50 grams of butter;
  • 70 grams of sugar.

It's important to note that for a perfect dessert, all ingredients must be of good quality. The recipe also emphasizes that everything must be at room temperature. So, first, prepare the baking pans. Grease them with butter and then sprinkle sugar into them. Then, immediately pour in the sugar. The result is plates with sugar crumbs inside. Place them in the refrigerator and begin cooking.

Unseal the chocolate, break it into pieces, place it in a saucepan or bowl, and melt it in a double boiler. When the chocolate has become liquid, add the sugar and butter. Stir and wait until everything melts and combines, becoming smooth. Then remove the chocolate from the boiler and let it cool to room temperature. Note: we do not use hot chocolate!

Place the egg yolks into the warm chocolate. Try to avoid any whites. Stir until the yolks are completely incorporated into the chocolate mixture.

Next, we whip the egg whites. Whether you use a whisk or a mixer is up to you. But keep in mind that they should form nice, firm peaks. The fluffier the egg whites, the fluffier the baked goods will be.

Once the egg whites are ready, the next step is mixing them into the chocolate. This must be done with pinpoint precision. First, don't add the egg whites all at once, but gradually, in several batches. After adding them to the chocolate, stir them first on the surface, and then, gradually, fold them into the entire mixture. Do this using smooth, circular motions. The end result should be a delicious, airy mixture. And, of course, smooth.

We carefully pour it into our baking pans, which we take out of the refrigerator. Next, we take a regular towel, fold it several times, and place it on the table. We sharply tap it with the bottom of the plate containing the mixture. Then, with a knife, very carefully loosen it from the sides of the pan. We do all this to help the baked goods rise.

After this, place our future dessert in a preheated oven at 200 degrees Celsius (400 degrees Fahrenheit). Bake for about seven minutes. Another important point: don't open the oven for seven minutes, otherwise everything will "fall." Then remove and serve. You can garnish the chocolate soufflé with powdered sugar. The recipe also says it will be delicious served with chocolate ice cream.

Soufflé as a base

This baked good is often used to make a cake. In principle, the soufflé recipe for this purpose is virtually identical to a regular, stand-alone dessert. However, there is a no-bake, refrigerated version. To do this, mix three egg yolks with 70 g of sugar and a teaspoon of vanilla sugar. Next, pour this into warm milk and cook in a double boiler until thick. Once cool, add 10 g of pre-soaked gelatin. Add whipped cream and a tablespoon of cocoa. Mix thoroughly, pour into a mold, and refrigerate for three hours. After this time, the chocolate soufflé cake is ready.
