Preparation

Separate the yolks from the whites of the chicken eggs. Add 100 ml of the resulting wine syrup to three yolks.

Place the mixture on the stove and simmer the yolk mixture over low heat. Stir constantly. Bring to a boil, but do not let it boil. Remove from the stove and cool in a bowl of cold water.

Step 5

Return the remaining wine syrup to the saucepan, then return it to the stove. Cook over very low heat until it comes to a boil.

Step 6

Beat two egg whites until they form a thick, fluffy foam.

Step 7

Carefully pour the boiling syrup into the whites, continuing to stir the mixture.

Step 8

Add the yolk mixture to the egg white mixture in several stages. Stir.

Step 9

Beat the softened butter. Gradually add the ice cream base to the butter, whisking until smooth.

Step 10

Transfer the ice cream to a mold and place it in the freezer to set for 5 hours.
