Separate the egg whites from the yolks. Place them in a deep bowl. The bowl should be cold, clean, and dry. Be careful not to let any water or yolk particles get into the egg whites. Otherwise, the meringue won't turn out right.
Add the sweetener. If the sweetener is in tablet form, dissolve it in a small amount of water before adding it to the egg whites.
Place the container in a double boiler and heat, stirring vigorously, until the sweetener is completely dissolved. Make sure the container doesn't touch the boiling water and that the egg whites don't heat above 50 degrees Celsius. Otherwise, the egg whites will curdle and the meringue won't turn out right.
Pour the egg white mixture into a mixer bowl and beat until stiff peaks form.
Add cornstarch. Stir with a silicone spatula or spoon. For delicate desserts, it's better to use cornstarch rather than potato starch, as it creates a smoother texture than potato starch.
Transfer the mixture to a pastry bag and pipe nest-shaped cookies onto parchment paper. Bake in the oven for 2 hours at 90 degrees Celsius.
Prepare the cream. In a deep bowl, combine the cottage cheese and cream cheese. You can add a little sweetener if desired. Beat with a mixer until smooth.
Place the cream in a pastry bag and fill the finished meringues.
Decorate the top with berries and fruits as desired.
