Step 1 – Preparing the dough
Let's start preparing the dough by combining the dry ingredients. Mix the flour, starch, and baking powder until smooth in a separate bowl.
Separate the whites from the yolks. Add a pinch of salt to the whites and beat with a mixer until fluffy and porous.
Add 2 tablespoons of sugar to the whites and beat until stiff peaks form.
Add all the remaining sugar to the yolks and beat until a fluffy, light yellow mass forms.
Peel the bananas (you should get 150 grams of peeled bananas), cut them into pieces, and place them in a separate bowl. Add 60 grams of vegetable oil and a tablespoon of lemon juice. Puree with an immersion blender.
Combine the banana puree and beaten egg yolks. Mix until smooth.
Add half of the dry ingredients to the yolks and bananas and mix with a mixer until smooth.
Add half the volume of whipped egg whites to the mixture and carefully mix the mixture with a spatula until smooth.
Sift the remaining dry ingredients into the dough and mix well.
Add the second portion of whipped egg white and mix well again.
The result should be a soft and fluffy dough. Even during the kneading process, the baking powder will begin to react with the lemon juice, ensuring the sponge cake will be plump and tender when baked.
Step 2 – Bake the banana sponge cake in the oven
Place the finished dough into a 20 cm diameter pan, first lining the bottom with foil.
Remove the finished sponge cake from the oven, take it out of the pan and leave it to cool on a wire rack at room temperature.
